Chicken Satay: - 2 pounds of chicken breasts or thighs, cubed - 1/4 cup neutral oil - 1/3 cup coconut milk - 3 tbsp. soy sauce - 2 tbsp. peanut butter - 1 tbsp. fish sauce - 2 tbsp. red curry paste - 1.5 tbsp. brown sugar
Southwest Chicken: - 2 pounds boneless chicken breasts or thighs - 1/4 cup olive oil - 2 tsp. paprika - 1.5 tsp. cumin - 1 tsp. allspice - 1.5 tsp. salt - 1 tsp. cayenne - 1.5 tsp. garlic powder - Freshly ground pepper to taste - 4 cloves garlic, minced - 1 onion, sliced - 1 bell pepper, sliced
Garlic Soy Chicken - 2 pounds chicken breasts or thighs - 1/4 cup soy sauce - 1 tbsp. dark soy sauce - 2 tbsp. water - 2 tbsp. brown sugar - 2 tbsp. sesame oil - 5 garlic cloves, minced - 1 tsp. fresh ginger, grated
Italian Chicken: - 2 pounds chicken breasts, cubed - 1/4 cup olive oil - 1 tbsp. paprika - 2 tsp. onion powder - 2 tsp. Italian seasoning - 1 tsp. crushed red pepper (or to taste) - 1.5 tsp. salt - Black pepper to taste - 4 garlic cloves, minced
Chicken Shawarma: - 2 pounds boneless skinless chicken thighs, cut into thin strips - 1/4 cup extra virgin olive oil - 1.5 tbsp. paprika - 1.5 tbsp. garlic powder - 1.5 tbsp. onion powder - 1 tbsp. cumin - 1/2 tbsp. coriander - 3/4 tsp. cayenne pepper - 2 tsp. salt - 1 tsp. black pepper - 2 tbsp. plain Greek yogurt - 2 tbsp. lemon juice - 1 small yellow onion, thinly sliced
I usually freeze all of these. I take one out the morning of the day I’m planning to make them. I sauté it on medium high heat until cooked. 😊
