Allow gelatin to bloom in water. Meanwhile heat up 3/4 cup water, 3/4 cup maple syrup, 1 tsp vanilla and a pinch of salt.
Combine hot maple syrup mixture with gelatin mixture and whip on medium speed for about 8-10 minutes. The mixture should turn white and fluff up somewhat stiff, make sure not to overmix or you'll be left with a rough looking mountain of fluff that won't spread or smooth out.
Pour quickly onto a parchment lined baking sheet and let set in the fridge for about 1 hour. Dust with arrowroot powder or powdered sugar after slicing. They will keep in the fridge for 7-10 days.
Hot Chocolate Concentrate
1 cup maple syrup
1/2 cup cacao powder
1 tsp vanilla
pinch of salt
mix and store in the fridge. Add 1-2 tbsp to warm milk or to your liking.
