Swedish Meatballs // Everyday Diabetic Recipes

 

What You'll Need

  • 1 teaspoon canola oil
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 pound extra-lean ground beef
  • 1/4 cup plain bread crumbs
  • 2 tablespoons chopped parsley
  • 1 egg
  • 2 tablespoons water
  • 1/2 teaspoon ground allspice
  • 3/4 cup reduced-sodium beef broth
  • 1/2 cup fat-free sour cream
  • 1 tablespoon flour

What to Do

  1. In a small skillet over medium heat, heat oil and saute onions and garlic 3 to 4 minutes, or until soft.
  2. In a large bowl, combine beef, sauteed onions and garlic, bread crumbs, parsley, egg, water, and allspice; mix well. Form mixture into 20 meatballs.
  3. In a deep skillet over medium-high heat, bring broth to a boil. Add meatballs, cover, reduce heat to low, and cook for 15 minutes or until no longer pink in center, stirring occasionally. Remove meatballs with a slotted spoon to a bowl.
  4. Remove 1/2 cup of broth to a bowl, whisk in flour. Slowly whisk flour mixture into broth and cook until thickened. Stir in sour cream and add meatballs back to skillet. Heat for 5 minutes and serve.
