1 medium sweet onion, diced 3 cloves garlic, minced ½ teaspoon dried thyme 3 ½ cups chicken stock 2 cups diced russet potatoes Kosher salt and freshly ground black pepper 5 cups finely chopped broccoli florets ½ cup heavy cream 8 ounces shredded extra-sharp cheddar cheese, about 2 cups Add potato flakes to thicken French Toast Casserole ½ a loaf of French bread, (about 8 oz) cut into cubes ½ cup butter 1 cup packed brown sugar 6 eggs 2 cups milk 2 teaspoons vanilla extract 2 teaspoons cinnamon Bake at 425 for 30 minutes
