Mediterranean Sheet Pan Chicken Recipe Ingredients: 8 to 10 chicken thighs, boneless and skinless purple onions, cut into chunks 1/2 cup Sundried Tomato and Oregano salad dressing 2 cloves garlic, minced 2 teaspoons Greek seasoning 1 teaspoon dried or fresh mint 1 tablespoon lemon juice 2 tablespoons capers 2 tablespoons pitted Kalamata olives For day of cooking: baby tomatoes crumbled Feta cheese Assembly Instructions: Place the chicken thighs in a large resealable freezer bag, along with the onion chunks, salad dressing, garlic, Greek seasoning, mint, lemon juice, capers, and olives. Squeeze the ingredients together in the bag to mix, then remove excess air and seal the bag. Place the bag in the freezer until you’re ready to cook your sheet pan dinner. Chipotle Chicken Recipe Ingredients: 4 chicken breasts, boneless, skinless 7 oz. Chipotle peppers in adobo sauce 1/2 onion, minced 2 cloves of garlic, minced 1/2 tsp. cumin salt 2 Tbsp. honey 5 oz. tomato paste 1 cup chicken broth or water For the Day of Cooking: chopped fresh cilantro (optional) lime wedges (optional) Assembly Instructions: Place chicken breasts in a large freezer bag. Add chipotle peppers in adobo sauce, minced onion, minced garlic, cumin, salt, honey, tomato paste, and chicken broth or water. Mix to combine. Remove the excess air, seal, and freeze. Slow cooker: Thaw. Add the contents of the bag to the slow cooker. Cook 2-3 hours on high, 4-5 hours on low. Instant Pot: Thaw. Add the contents of the large bag into the Instant Pot and secure the lid. Set manual high pressure for 8 minutes, with rapid release. Shred chicken and serve over rice, and garnish with chopped fresh cilantro and lime wedges, and taco fixings. Cauliflower Tacos Recipe Ingredients: 1 head of cauliflower, cut into 1-inch florets 3 Tbsp. olive oil 1 Tbsp. chili powder 1 1/2 tsp cumin 1/2 tsp. paprika 1/2 tsp onion powder 1/4 tsp red pepper flakes 1/2 tsp. salt 1/2 tsp. pepper Assembly Instructions: Put cauliflower in a large resealable freezer bag. Add oil and shake to coat. In a small bowl, mix spices. Add to bag. Shake to combine. Remove excess air, seal, and freeze. Cooking Instructions: Thaw. Bake at 400° on a parchment paper-lined baking sheet for 25 minutes, flipping halfway through. Or cook in the air fryer at 400° for 15 minutes, shaking often. How to Serve this Recipe Once cooked, the cauliflower can be served in soft or hard taco shells. Top them with your choice of cabbage or coleslaw, avocado crema, cilantro, jalapeƱos, sliced radishes, and pico de gallo. Maple Dijon Sausage and Veggies Sheet Pan Recipe Ingredients: 1 lb. garlic sausage ring sliced 1 sweet potato, medium, peeled, diced into 1” pieces 2 cups Brussels sprouts, frozen 1/2 purple onion, large chunks 3 cloves garlic, minced 2 Tbsp. olive oil 1 tsp. Italian seasoning 1/2 tsp. pepper 1/4 cup maple syrup 1/4 cup Dijon mustard Assembly instructions: Place all ingredients in a large freezer bag. Remove excess air, seal, and freeze. Thaw the freezer meal in your fridge overnight, or first thing in the morning. When you’re ready to make dinner, empty the bag contents on a large parchment-paper-covered baking sheet. Bake at 400° for 35 minutes. Dinner is served!
