Broccolli Cheddar Soup

 Ingredients

• 2 medium broccoli crowns (≈3 cups, chopped)
• 16 oz sharp or extra-sharp cheddar, grated (½ for soup, ½ for topping)
• 1 medium yellow onion, chopped
• 6 tbsp salted butter
• 14.5 oz chicken broth
• 2 garlic cloves, chopped
• ¼ cup + 3 tbsp all-purpose flour
• 3 cups 2% milk
• ½ cup heavy cream
• 1½ cups shredded carrots (optional)
• ⅓ cup shredded Parmesan
• Salt, pepper, Tony Chachere’s to taste
• Green onions & chopped bacon (for garnish)
Instructions
1. Melt butter in a pot over medium heat. Add onion, cook 1–2 min; add garlic, cook 2–3 min.
2. Whisk in ¼ cup flour, then 3 tbsp flour, stirring until no longer white (2–3 min).
3. Stir in milk, then broth.
4. Add broccoli + carrots; cover and simmer ~10 min, stirring occasionally, until tender.
5. Remove from heat. Stir in heavy cream, ½ cheddar, and Parmesan.
6. Season with salt, pepper, and Tony’s.
7. Top with remaining cheddar, green onions, and bacon if desired.
