Chicken Enchiladas
Saute together: 2 TBSP Butter, 1/2 Diced Onion, 1/2 can green chilies Beat in a bowl 3 oz. cream cheese, 1 TBSP milk, 1/2 tsp cumin, 1/4 tsp crushed red pepper Add cooked onion mixture and 2 cups cooked chicken Spoon into 12 tortillas and put in 9x13 glass pan Topping - 1 can cream of mushroom, 4 oz. sour cream, 1/2 can green chilies, 1/2 tsp salt, 1/2 tsp pepper Cover and bake @ 350 for 35 minutes. Sprinkle 3/4 cup jack cheese and bake uncovered for another 10 minutes. Chicken Tortilla Soup Throw into a soup pot: 1 diced onion, 1/2 tsp cumin, dash of cayenne, 1/2 tsp chili powder, 5 cups chicken broth, juice of 2 limes, 2-3 can pinto beans, 3 TBSP cilantro, 2-3 cups cooked chicken. Simmer for 20 minutes and top with chips, cheese, sour cream, and avocados Creamy Chicken Taquitos Mix in a bowl: 1/3 cup cream cheese, 1/4 cup salsa, juice of 1 lime, 1/2 tsp cumin, 1/2 tsp onion powder, 1 tsp chili powder, 1/4 tsp garlic powder, 3 TBSP cilantro, 2 cups shredded chicken, 1 cup grated cheese. Fill 10-12 tortillas and bake at 425 for 15-20 minutes
