Healthy Breakfast Biscuits
BREAKFAST BISCUITS ✨
✨1 pound ground turkey or pork sausage
✨1 yellow onion
✨1 red bell pepper
✨1 tbsp avocado oil
✨2 tsp salt
✨1 tsp Italian seasoning
✨1 tsp garlic powder
✨6 eggs
✨2 cups oat flour
✨2 tsp baking powder
✨1 1/2 cup shredded cheese, divided
Preheat the oven to 400F. Line a baking pan with parchment paper.
In a pan, heat oil and add the chopped onion and pepper and cook until softened. Remove and add the ground sausage and seasonings until cooked through, drain the fat.
Whisk the eggs in a bowl, then add the sausage, roasted veggies and 1 cup of cheese. Add the oat flour and baking powder.
Scoop into balls and place on the baking sheet 1-2 inches apart, pressing them into the shape of a biscuit. Sprinkle the remaining cheese on top.
Bake for 12-14 minutes until golden brown.
