DIY "Klondike" bars

 Reese’s Klondike Bars

Ice cream layer:
1 can (13.5oz) full fat canned coconut milk
1/2 cup peanut butter
1/3 cup raw honey or pure maple syrup
1 tsp pure vanilla extract
1/4 tsp salt
chocolate shell:
10oz dark or semi-sweet chocolate (i used dairy free and refined sugar free)
2 tbsp coconut oil
Add the ice cream ingredients to a high speed blender and blend until smooth and creamy. pour the mixture into a loaf pan lined with parchment paper and place in the freezer for 8+ hours. After 8+ hours, melt the chocolate and coconut oil together in the on the stovetop using the double boiler method. Remove the ice cream layer from the freezer and slice it into squares (I recommend putting half of the squares back in the freezer while you coat the first half in chocolate so they don't melt). Coat each ice cream square in melted chocolate then place on a tray lined with parchment paper. place in the freezer until the chocolates shell has hardened, then enjoy!
