Mini Muffins

 Here's the recipe 👇🏼

1 cup AP or fresh milled flour 1 cup whole greek yogurt 1/3 cup maple syrup 5 TBSP melted butter 1 3/4 tsp vanilla extract 1 tsp baking powder 1/2 tsp baking soda 1/3 tsp salt 2 eggs 3/4 cup mini chocolate chips
1.Preheat oven to 375 and prepare mini muffin tin. In a large bowl mix together all dry ingredients and set aside. 2.In a medium bowl combine all wet ingredients. Stir into dry ingredients until well combined. 3.Fold in mix in of chocolate chips Scoop 1 1/2 TBSP of muffin batter into each mini muffin tin. 4.Bake 10-13 minutes. 5.Let cool before serving.

I always add spinach, get them greens in there, plus the kids love the color. I usually bake whole bunch, blueberry, mini chocolate chip and pecan, at the the beginning of the week. Leave about half out and freeze the rest to thaw later.
