- 3 large sweet potatoes, cubed
- 2 Tbsp avocado oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & black pepper, to taste
- 2 lb ground beef
- 1 tsp chili powder

- 3/4 cup plain Greek yogurt
- 2 tsp lime juice
- 1 tsp minced garlic
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Garlic salt, to taste
- 1 small handful of fresh cilantro
- Optional: 1 tsp honey if skipping hot honey
- 1/2 cup local raw honey
- 1/2 tsp red pepper flakes
- Splash of apple cider vinegar
- Sliced avocado
- Cottage cheese (full fat or low fat)
- Optional: Cooked rice & shredded cheese to stretch for a larger family
- Preheat oven to 425°F.
- Toss sweet potato cubes with avocado oil and seasonings until well coated.
- Spread on a parchment-lined sheet pan and bake for 20 minutes.
- Toss and return to the oven for another 15–20 minutes, until golden and slightly crispy.
- In a skillet over medium heat, cook ground beef until browned and fully cooked.
- Drain if needed, then stir in seasonings to taste.
- In a small saucepan, gently warm honey with red pepper flakes over low heat (don’t boil).
- Remove from heat, stir in a splash of apple cider vinegar.
- Optional: Strain out pepper flakes for a milder version. Store in a small jar.
- Add all sauce ingredients to a wide-mouth mason jar.
- Blend with an immersion blender until smooth and creamy.
- A scoop of cottage cheese
- Roasted sweet potatoes
- Taco-seasoned ground beef
- Sliced avocado
- Drizzle with cilantro cream sauce and hot honey
- Optional: Add rice and shredded cheese to stretch the meal
- These bowls are great for meal prep—store components separately and reheat as needed.
- Add greens like shredded romaine or baby spinach for extra crunch and nutrients.
- Get creative with additional bowl components like peppers, onions and beans
