 Turkey Swedish Meatballs

Instructions:

Ingredients

  • 1 tablespoon butter
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 pounds ground turkey
  • ¾ cup almond flour
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon italian seasoning
  • 1 tablespoon sugar free ketchup
  • 1 teaspoon salt
  • ¼ ground black pepper
  • ½ cup sugar free ketchup

Instructions

  1. Preheat the oven to 350 F, line a baking sheet with foil and set aside.
  2. In a medium skillet over medium heat, melt the butter then add the onion and garlic and cook, stirring frequently, until the onion has softened.
  3. Remove the onion from heat and set aside to cool.
  4. In a large bowl, combine the ground turkey, almond flour, parmesan cheese, eggs, minced parsley, Italian seasoning, 1 tablespoon of sugar free ketchup, salt and pepper.
  5. Mix together until well combined.
  6. Form the mixture into a log on the prepared baking sheet
  7. Spread with the half cup of sugar free ketchup.
  8. Bake in the preheated oven for 50  minutes, or until the internal temperature reaches at least 165 F.
  9. Allow to cool for 10 minutes before slicing and serving
