 Meat Loaf

INGREDIENTS

  • 1 lb. ground beef
  • 1 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 egg, beaten
  • can of diced or petite diced tomatoes drained
  • 1/2 cup quick-cooking oats
  • 1/4 cup breadcrumbs

 

TOPPING

  • 1/3 cup ketchup
  • 2 Tbs brown sugar
  • 1 Tbs mustard

 

DIRECTIONS

  1. Preheat oven to 375ºF.
  2. Mix all meatloaf ingredients well and place into a baking dish, shaping it into a loaf.
  3. Mix topping ingredients and spread on the loaf.
  4. Bake for 1 hour

Salisbury Steak

INGREDIENTS

  • 1 lb lean ground beef
  • 1/3 cup dry breadcrumbs
  • 1/4 chopped onions
  • 1 minced garlic clove
  • 1 egg beaten
  • 1/2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 cups beef stock (or beef onion soup packets)
  • 1 large onion, thinly sliced
  • 1 cup sliced mushrooms
  • 2 minced garlic cloves
  • 3 Tbs cold water
  • 3 Tbs cornstarch

 

DIRECTIONS

  1. Combine beef, breadcrumbs, egg, onion, garlic, salt, pepper, and Worcestershire sauce.
  2. We prefer thinner patties, so we shape them into 4 patties about 3/4 inch thick, but adjust the thickness to your liking.
  3. Cook patties in a skillet in a little oil for 10 minutes, or until both sides are brown.
  4. Add stock, onion slices, mushrooms, and garlic to the skillet.
  5. Heat to a boil, then reduce heat, cover, and simmer for 10 minutes.
  6. Remove patties from the skillet, and keep them warm.
  7. Bring the onion mixture to a boil.
  8. Combine water and cornstarch.
  9. Add the water and cornstarch mixture to the onion mixture.
  10. Bring to a boil while stirring constantly for 1 minute.
  11. Put the meat back into the pan to warm up, then cover it with sauce. Place it on a platter and serve.
