Swedish meatballs with mashed potatoes // Dollar Tree Dinners
1 box of instant mashed potatoes
2 bags of meatballs (not the Italian style!) (10 oz) 2 bags of frozen asparagus (or your family's preferred vegetable) 1 packet of brown gravy mix Place frozen asparagus into a baking dish. Drizzle with oil and season with salt and pepper. Toss to combine and spread out the vegetables. Roast at 400ºF (200ºC) for 25 to 30 minutes, tossing halfway through. You can prepare the potatoes according to package directions if you have milk and butter; if not, just use 5 C of water and 1 tsp of salt in their place. Mix well to combine, cover with a lid, and set aside to stay warm while you make the meatballs and gravy. Add a packet of brown gravy mix to 2 cups of cold water. Stir well to combine. On the stovetop, pour both bags of meatballs and the gravy into a saucepan on medium-high heat. Stir constantly until heated through and bubbling. Serve meatballs and gravy on top of the mashed potatoes, alongside the asparagus, and enjoy!
