Gluten-Free Protein-Packed Breakfast Bagels
EGG MCMUFFIN
✨6 eggs
✨1 1/2 cup cottage cheese
✨1 red bell pepper, chopped
✨1/4 cup red onion, chopped
✨Handful of spinach
✨Feta, crumbled
✨Salt and pepper to taste
Combine everything in an 8x8 pan, top with feta and bake at 350 for 20-25 minutes
GLUTEN FREE PROTEIN BAGELS
✨1 cup Greek yogurt
✨1 1/4 cup GF flour mix (we used King Arthur 1:1)
✨1 tsp baking powder
✨1/2 tsp salt
✨egg wash and everything bagel seasoning (optional)
Combine all ingredients and roll into a log. Cut into sections and form into the shape of a bagel. Top with an egg wash (1 whipped egg) and everything bagel seasoning. Bake at 350 F for 20-25 minutes.
