Breakfast Burritos, Flautas and Spanish Rice // Simply Mama Cooks

INGREDIENTS 2 lbs Flour Tortilla dry mix 1 1/2 to 2 cups hot water 2 3/4 lbs Russet potatoes 12 large eggs 2 cans of refried beans (season to taste) 1 lb Mexican-style chorizo SALSA 3 lbs Roma tomatoes 3 jalapeƱos 5 to 6 cloves garlic 1/2 of an onion salt to taste


 INGREDIENTS FOR FLAUTAS

1 1/2 Russet potatoes 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp paprika salt & pepper to taste Mix 2 Tbsp of all-purpose flour with 3 Tbsp cold water for paste 18 corn tortillas cooking oil for frying INGREDIENTS FOR RICE 1 cup long grain rice 1 Tbsp chicken bouillon powder 1 tsp onion powder 1 tsp garlic powder 1/2 tsp ground cumin 1/2 tsp cracked black pepper 8 oz can tomato sauce 2 cups water 1 cup mixed vegetables INGREDIENTS FOR QUESO 16 oz Velveeta cheese 8 oz cream cheese 1 can of Rotel 1/4 cup pickling liquid from jalapenos 1/2 cup water (sub with milk & add more liquid if needed)
