Slow Cooker Pineapple Chicken
Ingredients
- 3 pounds Boneless Skinless Chicken Thighs diced into 1 inch pieces
- 1.5 can Pineapple Chunks in Juice 20 ounces, do not drain
- 0.75 Yellow Onion cut int 1 inch chunks
- 0.38 cup Soy Sauce
- 3 Tablespoons Cornstarch
- 4.5 cloves Garlic minced (or 1 Tablespoon minced garlic)
- 1.5 Tablespoon Grated Fresh Ginger
- 3 teaspoons Sesame Oil
- 0.38 cup Brown Sugar
- 0.75 teaspoon Red Pepper Flakes
- 1.5 Red Bell Pepper cut tin 1 inch chunks
- 3 chopped Green Onions for serving
- 3 teaspoons Sesame Seeds for serving
Instructions
- Drain the juice from the canned pineapple into a mixing bowl.
- Whisk in the soy sauce, cornstarch, garlic, ginger, sesame oil, brown sugar and red pepper flakes.
- Add the diced chicken, pineapple chunks and onion into the bottom of a slow cooker (5 quart or larger slow cooker).
- Pour the pineapple juice mixture on top.
- Cover and cook on low for 4-5 hours or on high for 2-2.5 hours until the chicken is cooked through (internal temperature of 165 degrees F).
- Stir in the red bell pepper for the last 30 minutes of the cooking time until it’s tender.
- Serve topped with the green onions and sesame seeds. Enjoy!
