BAKED CHICKEN EMPANADAS RECIPE
You Will Need
For the Filling:
½ kilo (1.1 lbs) ground chicken
1 small carrot, finely chopped
½ cup green peas
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
Salt and pepper to taste
1 tablespoon oil
For the Dough:
2 ½ cups all-purpose flour
½ teaspoon salt
1 cup unsalted butter, chilled and cubed
1 egg
6–8 tablespoons cold water
1 egg (beaten, for egg wash)
Instructions
Make the Filling:
In a skillet over medium heat, sauté onion and garlic in oil until soft.
Add ground chicken, cook until browned.
Stir in carrot and peas. Season with soy sauce, salt, and pepper. Cook for 5–7 minutes. Set aside to cool.
Make the Dough:
In a bowl, mix flour and salt. Cut in chilled butter until mixture resembles crumbs.
Beat in egg and slowly add cold water until dough comes together.
Form into a ball, wrap in plastic, and chill for 30 minutes.
Assemble Empanadas:
Roll out dough and cut into circles.
Add filling to each, fold, and seal edges with a fork.
Brush tops with beaten egg.
Bake:
Preheat oven to 375°F (190°C).
Bake empanadas for 20–25 minutes or until golden brown."
