Ingredients:

16 oz bag of shredded cabbage or cole slaw mix 

1/2 cup mayonnaise 

1 tbsp sugar

 1/2 tsp black pepper 

1 tsp salt

 1 tbsp lemon juice 

1 tbsp apple cider vinegar or white vinegar 

Directions: To a medium-sized bowl add all of the ingredients and stir well. Cover the bowl and refrigerate for at least 2 hours then enjoy!

Baked Loaded Queso

Ingredients 

  • 3 lb ground beef
  • 30 oz can rotel
  • 12 oz can diced green chilisor sliced jalapeños
  • 24 oz cream cheesecubed
  • 6 cups Mexican blend cheese
  • 6 tbs taco seasoning
  • 24 oz Velveeta cheesecubed
  • 0.75 cup heavy cream (optional)

Toppings

  • Fresh onion
  • Fresh cilantro

Instructions 

Preheat oven:

  • Preheat oven to 375 °F.

Cook meat:

  • To a cast iron skillet over medium heat on the stove add the ground beef and cook it through. Remove any excess grease.

Mix queso ingredients:

  • Add the cooked ground beef to a 9×13 baking dish with the rest of the ingredients. Stir well.

Bake queso dip:

  • Bake for a total of 15-20 minutes or until the cheese is melty *stir every 5-8 minutes until the cheese melts*
  • Remove from oven and stir in the heavy cream and top with your favorite toppings, fresh onion, cilantro, and more! Enjoy with tortilla chips!

Red White and Blue Cheesecake Fruit Salad

Ingredients

  • 12 oz whipped topping
  • 3.4 oz box cheesecake pudding mix
  • 12 oz strawberry yogurt
  • 1 tsp vanilla extract
  • 2 pints fresh blueberries
  • 1 lb fresh strawberries sliced
  • 2 cups mini marshmallows optional

Instructions

Mix creamy base:

  • To a large mixing bowl, add the thawed whipped topping, pudding mix, yogurt, and vanilla extract and stir well to get the creamy cheesecake filling.
  • Place the bowl in the refrigerator for one hour to set.

Add fresh fruit:

  • Add the prepared blueberries and strawberries (and the mini marshmallows, if using) to the big bowl with the whipped topping mixture.
  • Stir well and serve immediately, or store in the fridge to serve later.

Doritos Taco Pasta Salad
Ingredients :
16 oz rotini pasta 
1 lb ground beef
1/3 cup water
2 Tbsp taco seasoning 
2 large Roma tomatoes 
5 green onions 
1/4 romaine lettuce 
2 avocados 
15 oz can corn, drained
15 oz can black beans, drained and rinsed
1 1/2 cups crushed Nacho Cheese Doritos 
16 oz bottle creamy French dressing (we prefer Lighthouse Ranch)
Directions: 
Bring a pot of water to a boil and cook the pasta according to package instructions. 
Drain the pasta in a strainer and then rinse it with cold water. 
Heat a skillet over medium heat. Cook ground beef thoroughly, breaking it up.
Once cooked, remove any excess grease from the pan, then add the taco seasoning and water. Stir and let simmer for a few minutes, then let cool down completely. 
Chop the tomatoes, green onions, Romaine and avocado. 
Add the cooled pasta, cooled ground beef, chopped vegetables, corn, black beans, Doritos, and dressing to a large bowl. Mix well and serve.

Twice Baked Potato Casserole

Ingredients 

  • 20 medium russet potatoes
  • 1 lb bacondiced
  • 8 tbsp sliced butter
  • 1.5 cup sour cream
  • 8 tbsp cream cheese
  • 10 green onionschopped
  • 4 cups shredded sharp cheddar cheese
  • 1.5 cup milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme

Directions:

Preheat oven:

  • Preheat oven to 350 °F

Prepare potatoes:

  • Peel and dice the potatoes. Add the potatoes to a large pot of boiling water and boil until fork tender, about 8-10 minutes. Drain and set aside.

Cook bacon:

  • Cook the diced bacon in a skillet over medium heat until cooked through. Move to a paper towel-lined plate to cool and absorb excess grease.

Make potato mixture:

  • Add the potatoes, sliced butter, sour cream, cream cheese, green onions (reserve some for garnish), bacon (reserve some for garnish), 1 cup of cheese, milk, salt, pepper, and thyme to a large bowl and mix well with a potato masher or hand mixer.
  • Taste and add more milk if too dry, and more salt and pepper as needed.

Bake potatoes:

  • Grease a 9×13 baking dish. Pour the potato filling mixture in and bake for 20-25 minutes or until the cheese is melty.
  • Broil for the last 1-2 minutes. Top with the reserved green onions and bacon. Enjoy!
