Freezer Meals // Tales from an Empty Nest
Chicken Enchiladas
Tortillas Chicken 1 onion, chopped Chicken bouillon or broth Shredded cheese For the filling: 1 cup sour cream 1 can cream of chicken soup 1 can diced green chiles 1 pkg enchilada seasoning Bake at 350 for about 30 mins and then broil for a couple of mins to brown your cheese a little (if you wanna).
PHILLY CHEESESTEAK: See linked video above for ingredients. Dump meat in crockpot. High for 4-5 hrs, Low 6-8 hrs. Add the peppers and onions the last hour (or more if you want them softer). Melt provolone cheese over top when serving.
FRENCH DIP: (To make 2)
2-3 pound roast, cut in half (I used London Broil)
2 cans beef consomme
1 onion, diced
1 tsp onion powder
1 tsp garlic powder
Cheese and Buns
Divide the roast into 2 freezer bags. To each bag, add 1 can of consomme, onion and seasonings. To cook: Dump contents in crockpot and cook High 4-5 hrs or Low 6-8 hrs. Serve on a bun, with or without cheese, and dip in remaining juice.
CUBE STEAK: (To make 2)
8 cube steaks
2 cups beef broth
1/2 cup soy sauce
2 tbsp Worcestershire sauce
1-2 onions, diced
1 tbsp minced garlic
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Divide the steaks into 2 freezer bags. To each bag, add 1 cup of broth, 1/4 cup soy sauce, 1 tbsp Worcestershire sauce, 1 onion and seasonings. Dump contents in crockpot. Cook on high 4-5 hrs or low 6-8 hrs.
BACON CHEESEBURGER PASTA:
1 pound ground beef
6-8 pieces bacon, cooked
1 can RoTel
1 can cream of mushroom soup
1 onion, diced
3 cups beef broth
1-2 cups shredded cheese
16oz pasta
Seasonings of choice
Place the ground beef, rotel, soup, onion, and broth in a freezer bag. Put your bacon and cheese in separate bags. Add all bags to a gallon size bag to keep them all together. To cook: Dump all ingredients except the cheese and pasta into the crockpot. Cook on Low for 6-8 hours. Add the Pasta for the last 15-20 minutes. Stir in cheese till melted.
STROGANOFF:
1 pound ground beef
1 onion, diced
32 oz beef broth
1 can cream of mushroom soup
2 tsp minced garlic
2 tbsp Worcestershire sauce
3 cups egg noodles
1 cup sour cream
Seasonings of choice
Place the ground beef, onion, broth, soup, garlic, Worcestershire sauce and seasonings in your freezer bag and freeze. To cook, dump contents into your crockpot and cook on low 6-8 hours. Add the sour cream the last 10 minutes and serve over egg noodles.
