Menu Maid
Ingredients
- 1 tbsp olive oil
- 1 lb lean ground turkey or ground beef
- 2 large green peppers cut in 1/2 inch pieces
- 1/2 cup yellow onion, finely chopped
- 1 garlic clove, minced
- 1 10 ounce bag frozen cauliflower rice, thawed and excess moisture removed or 2 1/2 cups raw cauliflower rice for frozen you can squeeze rice in paper towels or press rice lightly with a spoon in a fine mesh colander
- 1 egg
- 1/4 cup parmesan cheese, shredded
- 1 14.5 ounce can fire roasted tomatoes with their juice
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
Instructions
Heat oven to 350℉
- In a medium bowl combine the cauliflower rice along with egg and parmesan cheese. Set aside.
- In a 10-inch cast iron or oven safe skillet add oil and ground turkey or beef. Cook meat breaking into crumbles until no longer pink. A little liquid from the ground turkey is fine. If you have a lot of grease drain that off.
- Add onion, garlic, peppers, and seasonings and Sauté 3-4 minutes.
- Stir in fire roasted tomatoes with their juice and bring to a low simmer.
- Once mixture is simmering, remove from heat and stir in cauliflower mixture. Smooth out the casserole and sprinkle on cheddar and mozzarella cheese. Place in preheated oven for 25 minutes until hot and bubbly.
- Remove from oven and let rest for 5 minutes. Serve and enjoy!
Stuffed Pepper Casserole

- 1 large skillet
- 1 9×13-inch baking dish
Ingredients
- 1 lb lean ground beef
- 1 large green bell pepper, diced
- 1 large red bell pepper, diced
- 1 cup yellow onion, diced
- 2-3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 tsp chili powder
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 1 cup long-grain brown rice
- 1 1/2 tbsp Worcestershire sauce
- 1 (15) ounce can fire roasted tomatoes, with juice
- 1 cup tomato sauce
- 1 1/2 cups beef broth
- 2 cup cheddar cheese, shredded
Instructions
Preheat oven to 375°. Grease a 9×13 baking dish with non-stick spray.
- In a large skillet over medium heat crumble and cook ground beef until no longer pink, about 5 minutes. Add peppers, onions, garlic, and seasonings. - Bring mixture to a low simmer then transfer to prepared casserole dish. Cover tightly with foil and bake in preheated oven for 50-minutes to 1-hour, or until rice is tender and liquid is absorbed. Add remaining 1 cup of cheese to the top and place back in the oven uncovered for 5 minutes until cheese is melted. Allow to rest 10-minues before serving.
Notes
Tips
- Brown rice needs a longer cooking time. Make sure to leave time to cook the casserole a bit longer using brown rice. If using white rice you can reduce the time about 20-minutes.
- Meat- Use ground turkey or pork in place of ground beef. You can also use Italian sausage in addition to ground beef or turkey.
- Rice- This recipe works well with long grain brown or white rice.
- Other veggies- More veggie options include carrots, mushrooms, cauliflower, green beans, corn, zucchini, and spinach.
Can I make this recipe with cauliflower rice for a low-carb meal?For this recipe I would not recommend swapping rice for cauliflower rice as the liquid will need to be adjusted quite a bit. Try my Low-Carb Stuffed Pepper Casserole to enjoy a well tested lower-carb version.
Can I make this without meat?Yes! If you want to eliminate the ground beef simply add black or white beans and more veggies to bulk up the filling.
Does stuffed pepper casserole freeze well?Yes! Make sure the casserole is cooled completely before placing in a freezer safe container. Freeze for up to 3 months. When ready to serve, thaw, and heat in the microwave or oven until warmed through.
