 Chicken Parm

Ingredients
  

  • 1 pint ugly chicken
  • 2 cups pasta or marinara sauce
  • 1 cup diced tomatoes (drain the liquid)
  • 2 cups shredded mozzerella
  • 1 cup shredded parmesean cheese
  • 1/2 cup bread crumbs
  • fresh or dried basil to taste

Instructions
 

  • On the bottom of the baking dish spread out one cup of pasta sauce.
  • Divide the ugly chicken and spread across the baking dish on top of the pasta sauce
  • Add the remaining pasta sauce and the diced tomatoes evenly on the top
  • Add the mozzerella cheese, then the parmesean cheese
  • sprinkle the basil and then add the bread crumbs evenly on top.
  • Bake at 400 degrees for 15 minutes.
  • Let sit for 5 minutes before serving

*Street Taco Bake Recipe* 🫙 1 pint jar street taco meat 1 pint jar refried beans 1 Tbsp dehydrated onions 1 small can corn 1 small bag Chili Cheese Fritos ¼ cup taco sauce 1 cup cheese 1 prepared package Jiffy cornbread mix Preheat oven to 400°. Spray 8 x 8 pan with oil. Crumble Fritos and line pan. Drain meat and beans. Mix meat, beans, chilis, and taco sauce. Pour over chips. Add a layer of cheese. Prepare cornbread mix according to package directions and stir in corn. Pour the batter on top of meat mixture. Bake, uncovered, until cornbread is cooked through, 20 – 25 minutes.

Campbell's Easy Chicken and Cheese Enchiladas 1 can of cream of chicken soup 1/2 cup sour cream or greek yogurt 1 cup of salsa 2 tsp chili powder 2 cups cooked chicken-one pint of ugly chicken 1/2 cup of shredded cheese four tortillas 1 small tomato chopped 1 green onion chopped stir soup, sour cream, sala and chili powder in small bowl. stir one coup of soup mixture chicken and cheese in bowl divide chicken among the tortillas and roll up and place seam side down in baking dish pour remaining sauce over enchilada and over and bake at 3500 for 40 minutes or until hot and bubbly. take out and add extra cheese if desired and put back in uncovered until melted. Top with tomato and green onion. make salsa rice using leftover broth from ugly chicken and leftover salsa for liquid for rice. Add water to get to correct amount of liquid if needed. Depends on amount of rice you are making.

Beef Fajita-Stuffed Peppers

Ingredients
  

  • 1 small diced yellow onion
  • 1 pint ugly beef
  • 1 tbsp beef bouillon granuals
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 4 large bell peppers, cut lengthwise, deseeded
  • 1 cup shredded cheddar cheese (or fiesta blend)

Fajita Seasoning

  • 4 tsp chili powder
  • 2 tsp ground cumin
  • 2 tsp paprika (any kind will work)
  • 1 tsp onion powder
  • salt & pepper to taste
  • like heat? Add cayenne pepper to taste

Instructions
 

  • Preheat oven to 375 F
  • Place halved bell peppers on a baking sheet and put into the oven for 20 minutes.
  • Saute diced onions until soft, add remaining ingredients except for cheese and bell peppers. Allow to heat through (approx 10 minutes)
  • Divide mixture into the 8 halves of bell pepper, top with cheese, bake for 10 minutes or until the cheese is melted
  • Serve hot with your choice of sides. I love sour cream and salsa for this.

Fajita Seasoning

  • Mix all ingredients together, store in an air tight container

Pepperoni Pizza Casserole from Allrecipes

  • 1 pound ground beef

  • 1 (8 ounce) package uncooked egg noodles

  • 20 ounces shredded mozzarella cheese, divided

  • 1 (16 ounce) jar spaghetti sauce, or as needed

  • 1 (8 ounce) package sliced pepperoni, coarsely chopped

  • 1 (2.5 ounce) can sliced mushrooms, drained

  • 1 (2.25 ounce) can sliced black olives, drained

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. Cook ground beef in a skillet over medium heat until no longer pink, breaking into crumbles as it cooks, about 10 minutes.

  3. Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, about 5 minutes; drain.

  4. Combine beef, noodles, 1/2 mozzarella cheese, spaghetti sauce, pepperoni, mushrooms, and black olives in a large bowl; transfer to a 9x13-inch baking dish. Top with remaining 1/2 mozzarella cheese. Cover the dish with aluminum foil.

  5. Bake in the preheated oven until casserole is bubbling, 30 to 45 minutes.

Chicken Nuggets / 2 LeeLou Creates 1 can or jar of chicken 1 egg 1/2 to 2/3 cup of any kind of shredded cheese Any spices you like Mix all ingredients in a bowl. Shape into nuggets. Air fry at 375 for about 20 minutes, turning halfway through. You can also cook them in the oven, on a baking sheet with parchment paper, at 400 degrees for 20 - 30 minutes, turning halfway through. Times for both air fryer or oven times may very based on the size, thickness and how brown you like them.
