Chicken Parm
Ingredients
- 1 pint ugly chicken
- 2 cups pasta or marinara sauce
- 1 cup diced tomatoes (drain the liquid)
- 2 cups shredded mozzerella
- 1 cup shredded parmesean cheese
- 1/2 cup bread crumbs
- fresh or dried basil to taste
Instructions
- On the bottom of the baking dish spread out one cup of pasta sauce.
- Divide the ugly chicken and spread across the baking dish on top of the pasta sauce
- Add the remaining pasta sauce and the diced tomatoes evenly on the top
- Add the mozzerella cheese, then the parmesean cheese
- sprinkle the basil and then add the bread crumbs evenly on top.
- Bake at 400 degrees for 15 minutes.
- Let sit for 5 minutes before serving
Beef Fajita-Stuffed Peppers
Ingredients
- 1 small diced yellow onion
- 1 pint ugly beef
- 1 tbsp beef bouillon granuals
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tbsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1 tsp black pepper
- 4 large bell peppers, cut lengthwise, deseeded
- 1 cup shredded cheddar cheese (or fiesta blend)
Fajita Seasoning
- 4 tsp chili powder
- 2 tsp ground cumin
- 2 tsp paprika (any kind will work)
- 1 tsp onion powder
- salt & pepper to taste
- like heat? Add cayenne pepper to taste
Instructions
- Preheat oven to 375 F
- Place halved bell peppers on a baking sheet and put into the oven for 20 minutes.
- Saute diced onions until soft, add remaining ingredients except for cheese and bell peppers. Allow to heat through (approx 10 minutes)
- Divide mixture into the 8 halves of bell pepper, top with cheese, bake for 10 minutes or until the cheese is melted
- Serve hot with your choice of sides. I love sour cream and salsa for this.
Fajita Seasoning
- Mix all ingredients together, store in an air tight container
Pepperoni Pizza Casserole from Allrecipes
1 pound ground beef
1 (8 ounce) package uncooked egg noodles
20 ounces shredded mozzarella cheese, divided
1 (16 ounce) jar spaghetti sauce, or as needed
1 (8 ounce) package sliced pepperoni, coarsely chopped
1 (2.5 ounce) can sliced mushrooms, drained
1 (2.25 ounce) can sliced black olives, drained
Directions
Preheat the oven to 375 degrees F (190 degrees C).
Cook ground beef in a skillet over medium heat until no longer pink, breaking into crumbles as it cooks, about 10 minutes.
Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, about 5 minutes; drain.
Combine beef, noodles, 1/2 mozzarella cheese, spaghetti sauce, pepperoni, mushrooms, and black olives in a large bowl; transfer to a 9x13-inch baking dish. Top with remaining 1/2 mozzarella cheese. Cover the dish with aluminum foil.
Bake in the preheated oven until casserole is bubbling, 30 to 45 minutes.
