Valentine's Lasagna
Lasagna and Manicotti video had a mis-hap and it was 25 minutes long because it someone recorded 6 times on the video so here's the base recipes for making my lasagna.
Lasagna with "Pink Sauce" Ingredients: 8 oz low fat cottage cheese 16 oz low moisture ricotta cheese 4 oz feta cheese (I used roasted pepper feta cheese spread from Thrive Market) 4 oz softened cream cheese 8 oz finely shredded cheese of your choice 1/2 TBS each: salt, pepper, dried parsley, dried rosemary, dried thyme, Italian season Directions: Mix until cheese and seasonings are well combined then taste for and add any additional spices or seasonings desired. 12-16 oz lasagna noodles prepared to al dente with 1 TBS salt in water and 1 TBS olive oil. Remove from heat but do not dump out of pot. Preheat oven to 400 degrees (F) Remove noodles from one by one from pot with tongs gently to not break them. Lay each noodle side by side and flat on a cookie sheet. Do NOT stack the noodles. In a 9 x 11 casserole or baking dish, ladle a thin layer of sauce Spread 1 TBS of cheese sauce down each noodle one by one then tightly roll each noodle up so it looks like a snail. 5-6 cups pink sauce Maggie's Favorite Pink Sauce 15 oz tomato sauce and 1 can hot water to rinse all sauce out of can 14.5 oz diced tomatoes with green peppers, celery and onions (Great value brand "Ro-tel) 6 oz tomato paste an 3/4 can of hot water to rinse out all of the paste from can 22-24 oz jar alfredo sauce with 8-10 ozs warmed milk product shaken in empty jar to rinse all of sauce from jar 1-2 TBS garlic powder OR minced garlic in water 1-2 TBS minced onion OR onion powder 1/2 tsp. Himalayan finely ground sea salt 1/2 TBSP ground black pepper 1/2 TBSP Italian seasoning Directions: Add all to 6 quart pot and bring to a boil. Stir continually for 5 minutes until tomato paste is fully softened and incorporated in sauce.Turn down to a simmer and add 1 cup shredded or grated cheese of your choice. I used fresh mozzarella ball cut into small cubes and added after sauce came to a boil. Stir regularly for ADDITIONAL 2 MINUTES to keep alfredo, cheese and milk product from burning or curdling THEN TURN TO LOW AND ALLOW TO SIMMER UNTIL CHEESE IS FULLY MELTED. ** thawed and drained frozen spinach, 1 lb browned and drained ground meat if desired**
