4 Cheese and Ground Beef Stuffing for Pasta

1 1/2 lbs browned, seasoned and drained ground meat

8 oz brick well-softened cream cheese, cut into cubes and blended with ground meat after meat has cooled slightly but is still warm enough to aid in melting cream cheese

In a large mixing bowl, add:

 a total of 12 ozs fresh mozzarella - cubed; 1 C grated Parmesan; 

8 ozs cottage cheese; 8 ozs Ricotta cheese (low-moisture-very important)

Then add any seasonings , salt and pepper. Use mixer to blend spices, seasonings and cheeses just until all are fully incorporated 

Next, add 2 slightly beaten eggs and blend for just a few seconds until fully mixed into the cheese mix. 

Now add the seasoned meat and cream cheese. Mix gently by hand until all are fully and well incorporated together. Cover and return to refigerator to chill and marry for a minimum of 1 hour before using or up to 2 days. If mix sits for more than 2 hours, use a large plastic or wooden spoon to gently stir and ensure everything is happy and well blended before using.
