Thanksgiving Side Dishes
Cheese Broccoli Rice Casserole Recipe:
Ingredients:
-3 Tbsp Butter
-1/2 an Onion, finely diced
-1 1/2 tsp Minced Garlic
-2 (12oz) bags of Frozen Broccoli Florets, THAWED and chopped into bite size pieces
-4oz. Velveeta Melting Cheese, cut into small cubes
-1 can Cream of Chicken
-1/4 Cup Sour Cream
-3/4 Cup Milk
-3/4 tsp Salt
-1/2 tsp Pepper
-3/4 tsp Garlic Powder
-3/4 tsp Oregano
-1/2 tsp Paprika
-1/4 tsp Mustard Powder
-2 to 3 Cups Shredded Cheddar Cheese, divided
-2 1/2 Cups of Cooked White Rice
Directions:
***In a large saucepan, add butter and onion and sautee until the onion begins to soften. Then add in minced garlic, thawed chopped Broccoli and Seasonings. Cook on med/low for about 10 minutes, just to soften the broccoli up a bit. Next, add in cubed Velveeta Melting Cheese, Cream of Chicken Soup, Sour Cream and Milk. Continue to cook until the cheese is completely melted. After that, add Cooked White Rice and stir to combine. Remove from heat. Pour mixture into 9x13 baking dish. Top with Shredded Cheddar Cheese. Bake at 350 for 35 to 40 minutes, or until that top is slightly golden brown. ENJOY!

Stovetop Stuffing with Sausage, Apple, and Onion from Domesticate

Ingredients
- ½ cup unsalted butter, divided
- ½ pound sweet Italian turkey or chicken sausage, casings removed (You can absolutely use pork or beef sausage if you like.)
- 2 Golden Delicious apples, peeled, cored, and cut into a small dice
- 1 medium yellow onion, finely chopped
- 1 teaspoon fresh thyme leaves, or more to taste (optional)
- 3 cups low-sodium chicken broth, divided
- 2 6-ounce boxes Stovetop Stuffing (Turkey, Herb, Chicken, or your flavor of choice!)
- Freshly choppped parsley or extra thyme for serving (optional)
Instructions
- Preheat the oven to 375°F.
- Add 1 tablespoon of the butter to a large ovenproof braiser, cast iron skillet, or sauté pan over medium heat. (If you don’t have an ovenproof pan, don’t panic—you can transfer your sausage to a casserole dish later on.) When the butter is melted and bubbling, add the sausage to the pan and cook for about 6 minutes, stirring and breaking up the meat into small pieces with a spatula, until lightly browned.
- Stir in 3 more tablespoons of the butter. Once melted, stir in the apple, onion, and thyme (if using). Pour in ½ cup of the chicken broth to deglaze, and use your spatula to scrape up all the delicious browned bits from the bottom of the pan. Reduce the heat to medium-low and cook for 6 to 8 minutes until the onion is translucent and the apple is soft.
- Add the remaining 2½ cups of broth to the pan and bring it to a boil. Turn off the heat and fold in the Stovetop stuffing mix. Cover the pan with a lid and let it sit for 5 minutes, then fluff the stuffing with a fork. (If you’re transferring the stuffing to a baking dish, do that now.)
- Dot the remaining butter on top of the stuffing and bake for 15-20 minutes or until browned and crisped on top to your liking. Serve warm topped with fresh parsley if you feel fancy.
Breakfast Stuffing Casserole
Ingredients
- 1 lb turkey sausage or bacon
- 3 tablespoon butter divided
- ½ cup diced onion
- 1 bell pepper diced
- 8 eggs
- ½ cup shredded cheddar cheese
- 6 oz box stuffing mix sage or any flavor you like
- 1 cup Hollandaise sauce (optional)
- hot sauce (optional) to taste
Homemade Hollandaise Sauce
Ingredients
- 1 stick butter
- 4 egg yolks
- 1 tablespoon freshly squeezed lemon juice more or less to taste
- 2-3 tablespoon milk or half and half
- Optional: dash cayenne pepper
- Instructions
- In a small pot over medium heat, melt the stick of butter.
- Add egg yolks, lemon juice and milk or half and half to the melted butter and continually whisk for about 3-5 minutes or until sauce starts to get thick and frothy. Remove from heat.
- Finally sprinkle and stir in cayenne pepper and serve immediately.
- Instructions For Casserole:
- In a skillet or dutch oven, melt 2 tablespoon of butter. Add turkey sausage, diced onion and bell pepper. Stir and cook for 4-5 minutes or until onions are translucent and turkey is cooked through.
- Beat together eggs in a large mixing bowl. Add cooked onion, peppers and sausage then shredded cheese and cubed stuffing. Toss to thoroughly coat stuffing.
- Use remaining 1 tablespoon butter to grease a small casserole dish. Pour and spread the stuffing mixture evening.
- Cover loosely with foil and bake at 350˚ for about 20-25 minutes or until all eggs appear cooked (they will no longer look wet). Remove from oven, add Hollandaise or hot sauce sauce if desired and serve!
Notes
Cover with foil loosely to allow some venting of moisture.

Damn Good Corn Pudding - the name says it all. This stuff is SO GOOD! I could make a meal out of this yummy side dish. SO easy to make and feeds a crowd. Flour, sugar, baking powder, salt, red pepper flakes, cumin, coriander, eggs, butter, heavy cream, green onions, creamed corn, frozen corn kernels. Ingredients:
- 1¾ cups all-purpose flour
- 1¼ cups sugar
- 3 Tbsp plus 1 tsp baking powder
- 1½ tsp salt
- ½ tsp red pepper flakes optional
- 1 tsp cumin
- 1 tsp coriander
- 6 eggs
- ½ cup butter melted
- 2 cups heavy cream
- 1 (14.75-oz) can of creamed corn
- 2 green onions chopped
- 1½ cups fresh or frozen corn kernels
Instructions:
- Preheat oven to 300ºF. Lightly spray a 9x13-inch dish with cooking spray.
- Whisk together flour, sugar, baking powder, salt, cumin and coriander. Set aside.
- In a large bowl, beat together eggs, heavy cream, and butter with a handheld mixer.
- Stir in creamed corn, green onions and corn kernels.
- Add flour mixture and mix until just combined.
- Pour batter into prepared 9x13-inch dish. Cover with foil.
- Bake covered for 1 hour. Remove foil and bake an additional 30 minutes.
