Holiday Meals Part 2
Pumpkin Cream Cheese Stuffed French Toast
Servings: 4
Ingredients:
- 4 slices French bread (thick slices)
- 8 oz cream cheese, softened
- 1/4 cup pumpkin puree
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 2 eggs
- 2 tablespoons butter, melted
- 1/2 cup milk
- Confectioners’ sugar, for dusting (optional)
Instructions:
- Preheat oven to 325°F (165°C).
- Create a pocket in each bread slice by cutting into the center from one side.
- In a small bowl, mix together cream cheese, pumpkin puree, brown sugar, vanilla extract, and pumpkin pie spice until smooth.
- Stuff each bread slice with the cream cheese mixture, dividing it evenly among the four slices.
- In a shallow dish, whisk together eggs, melted butter, milk, and a pinch of salt.
- Soak each bread slice in the egg mixture for about 40 seconds per side, repeating with the remaining slices.
- Heat a non-stick skillet or griddle over medium heat.
- Cook the stuffed French toast until golden brown on both sides, about 2-3 minutes per side.
- Dust with confectioners’ sugar, if desired.
- Serve warm and enjoy!
Tips:
- Use high-quality French bread for the best results.
- Don’t overfill the bread slices with the cream cheese mixture, as it may ooze out during cooking.
- If you prefer a crisper exterior, cook the French toast in a skillet with a small amount of oil or butter.
- Consider topping with whipped cream, maple syrup, or chopped nuts for added flavor and texture.
This recipe combines the warmth of pumpkin with the richness of cream cheese, all wrapped up in a crispy, golden-brown French toast package. Perfect for a fall brunch or breakfast treat!
