Southwest Pasta Bake
1 10.75 oz can Spicy Nacho Cheese Soup and 1 can filled with half and half , stirred to get all goodness
16 oz frozen sweet corn
12 - 16 oz frozen Cali veggie mix
10.75 - 15 oz black or red beans undrained
1 1/2 Cup shredded sharp Cheddar cheese
Mix all of the above together
Prepare 1 lb textured pasta (such as rotini) to al dente per directions on container
** Also can add 12-16 oz canned or already cooked meat **
Grease 9 x 9 dish and layer pasta on bottom then sauce mix on top then bake for 30 minutes in a preheated 375 degree oven uncovered.
Remove from oven and add another 1 1/2 Cups of shredded cheese to top and 1 c Panko bread crumbs then return to oven for additional 15 minutes or until heated through, cheese is melted and bread crumbs are golden brown
