TACO TATER TOT CASSEROLE 1 lb ground beef 1 onion sliced 2 garlic cloves, minced 1 packet taco seasoning mix 1 cup enchilada sauce divided 1.5 cups frozen corn 1.5 cups bell pepper red, yellow, green, diced 12 oz. Black beans drained 3 cups shredded cheddar cheese divided 16 oz. Frozen tater tots 1/4 cup salsa Additional Toppings: diced tomatoes, shredded lettuce, sour cream, avocado slices. 1)Preheat oven 400 F 2)Brown ground beef, onion, & garlic over medium high until no pink remains. Drain any fat. 3)Stir in taco seasoning, 1/2 cup water, 2/3 cup enchilada sauce, corn, bell peppers & beans. 4)Cook until thickened (about 5 min) 5)Pour beef mixture into 9x13 pan. Sprinkle w/1.5 cups cheese and arrange tots neatly on top. 6)Bake 30 min. Combine salsa & remaining 1/3 cup enchilada sauce. Spread over tater tots & top w/ remaining cheese. 7)Bake an additional 10 min or until cheese is melted & bubbly. 8)Serve w/desired toppings.
