Key Lime Pie Fruit Dip

Ingredients

  • ½ cup marshmallow fluff or marshmallow creme
  •  cup sweetened condensed milk
  • ¼ cup key lime juice can use bottles
  • 1 tbsp lime zest plus extra for garnish
  • 1 cup heavy whipping cream

Instructions

  • Whisk together marshmallow fluff, sweetened condensed milk, lime juice and zest in a medium bowl until combined.
  • In a large mixing bowl, beat heavy cream until stiff peaks form.
  • Fold whipped cream into marshmallow mixture. Cover and chill for at least an hour and up to 24 hours.
  • Top with additional lime zest prior to serving.
  • Serve with strawberries, pineapple, graham, crackers, nilla wafers, animal crackers

Cheeseburger Wrap

Ingredients

  • 1 pound lean ground beef
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons ketchup
  • 1 teaspoon dried minced onion
  • pepper and salt to taste
  • 4 large flour tortillas
  • shredded cheddar cheese
  • lettuce
  • tomato slices
  • sliced red onion
  • mustard

Instructions

  • Brown and crumble ground beef in a large non-stick skillet over medium-high heat. Drain any grease. Add Worcestershire sauce, ketchup, minced onion, salt and pepper to beef. Stir to combine.
  • Reduce heat to low and let mixture heat thoroughly, about 5 minutes or so.
  • Sprinkle some cheddar cheese down the center of each tortilla. Divide beef mixture evenly among the four tortillas and place over the cheese. Drizzle a little mustard (and more ketchup, if desired) on top of the beef, and then add a couple tomato slices. Roll up each tortilla burrito-style.
  • Place wraps, two at a time, onto a preheated indoor or outdoor grill. Grill for 3 to 5 minutes, or until grill marks and golden-brown.
    Carefully remove wraps from grill and place on a plate. Gently unravel wrap to add some lettuce, red onion, etc. Re-roll wrap and then cut in center diagonally. Serve immediately and enjoy! ♥

Southwest Chicken Wraps

Ingredients 

Sauce

  • 3/4 cup sour cream
  • 3/4 cup salsa
  • 1 1/2 tablespoons taco seasoning

Wraps

  • 4 large tortillaswrap size
  • 1 1/3 cups shredded lettuce
  • 1/2 cup tomatodiced
  • 1 whole avocadodiced
  • 1/2 cup cheddar cheeseshredded
  • 2 cups cooked chickenshredded
  • 1 cup Fritoscrushed

Boat Dip

INGREDIENTS

  • 4 ounces sour cream
  • 1 packet Taco Seasoning, McCormick Organic Mix
  • 2 cups Cheese(Mexican blend, shredded)
  • 1 can rotel tomatoes

INSTRUCTIONS
 

  • Drain the Rotel in a collander for a few minutes to remove the excess moisture.
  • In a large bowl, stir together all the ingredients.
    24 ounces sour cream,1 packet Taco Seasoning, McCormick Organic Mix,2 cups Cheese,1 can rotel tomatoes
  • Chill in the refridgerator for a minimum of one hour or up to over night for best flavor.
  • Serve with pork skins, chopped vegetables for a keto friendly option.

NOTES

Boat dip variations
  • Bacon Bits - make your own bacon bits with keto-friendly bacon (optional but still delicious)
  • Diced Chilis - add a 4 ounce can of diced chillis for additional heat and flavor.
  • Jalapeno - add more spice and heat with a finely dices jalapeno.
  • Mexi-Corn - not keto-friendly but a small can of drained Mexi-Corn will ad a touch of sweetness and crunch to this dip.
Why do you drain the Rotel?
Completely optional but I like to remove the extra moisture to help keep the dip from becoming too watery.
What do you serve with boat dip?
Pork rind chips or cup up vegetables. I don't keep keto so I love a Frito Scoop corn chip or traditional tortilla chip.

Dill Pickle Dip

Ingredients

  • 8 ounce package of cream cheese , softened to room temperature
  • 1 cup finely chopped dill pickles
  • 1/4 cup finely chopped sweet onion
  • 3 tablespoons pickle juice
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon kosher salt
  • pinch black pepper
  • pretzels or veggies , for serving

Instructions

  • Using a wooden spoon, press into the cream cheese and stir to loosen until smooth. Add the remaining ingredients and thoroughly combine.
  • Cover with plastic wrap and refrigerate for an hour before serving, then let sit out a bit to soften
  • Serve with pretzels or veggies, or spread on a bun for a hamburger.

ITALIAN HOAGIE DIP

Ingredients

  • 1/4 lb small pepperoni diced
  • 1/4 lb genoa hard salami diced
  • 1/4 lb thin ham diced
  • 8-10 slices provolone cheese diced
  • 3/4 cup red onion diced
  • 1/2 cup pickled banana peppers minced
  • 3/4 cup mayo
  • 1/4 cup sour cream
  • 1/2 tsp pickled pepper juice optional
  • 1 tbsp Italian seasoning
  • 3 1/2 - 4 cups finely chopped Iceberg lettuce

Instructions

  • To a large mixing bowl, add the chopped meats, cheese, onions, and peppers. Stir to combine.
  • In a smaller medium sized mixing bowl, add the mayo, sour cream, Italian seasoning, and pepper juice (if using). Whisk together until the mixture's smooth and evenly combined.
  • Pour the dressing mixture into the bowl with the combined meats and cheeses. Gently toss until evenly combined.
  • Just before serving, stir in the lettuce.
  • Serve with your choice of dipping options, and enjoy!

Whipped Feta Dip

Ingredients 

  • 12 ounces feta crumbled or block
  • 8 ounces cream cheese softened
  • 1 garlic clove
  • 2 Tablespoons Olive Oil
  • 1/2 lemon juice and zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of red pepper flakes

Instructions 

  • In a food processor combine feta, cream cheese, garlic, olive oil, lemon juice and zest, salt, pepper, and red pepper flakes.
  • Pulse until smooth and creamy. Serve with pita bread, carrots, crackers, or cucumbers.
