Lasagna Roll-ups // Freezer Meals 101

 

Ingredients

  • 9 lasagna noodles cooked and drained
  • 10 oz. spinach, frozen chopped, thawed and drained
  • 1 cup Ricotta cheese
  • 1 cup mozzarella cheese shredded, divided
  • 1/4 cup Parmesan cheese shredded
  • 1/2 onion minced
  • 2 cloves garlic minced
  • dash salt
  • dash pepper
  • 1/2 tsp. nutmeg
  • 14 oz. fire roasted diced tomatoes
  • 28 oz. crushed tomatoes
  • 2 tsp. basil
  • 1 8x8 foil tray or freezer safe dish
  • aluminum foil

Assembly instructions:

  • Cook the lasagna noodles two minutes less than the package directions. Drain and rinse with cold water.
  • In a bowl, mix together the drained chopped spinach, ricotta cheese, 1/3 cup of the mozzarella cheese, minced onion, minced garlic, salt, pepper, nutmeg, and Parmesan cheese.
  • In another bowl, mix together the crushed tomatoes, fire roasted tomatoes, and basil.
  • Place 1/2 cup of the sauce at the bottom of your tray.
  • Spread a thin layer of the spinach ricotta filling mixture down the centre of each lasagna noodle and roll up, placing the completed roll down in the tray.
  • Once all the lasagna rolls are in the tray, cover them with the remaining red sauce and sprinkle with the remaining 2/3 cup mozzarella cheese.
  • Add aluminum foil. Freeze.

Cooking instructions:

  • Thaw. Bake covered in a 350° oven for 40 minutes. Uncover and bake for an additional 10 minutes.
