Lasagna Roll-ups // Freezer Meals 101
Ingredients
- 9 lasagna noodles cooked and drained
- 10 oz. spinach, frozen chopped, thawed and drained
- 1 cup Ricotta cheese
- 1 cup mozzarella cheese shredded, divided
- 1/4 cup Parmesan cheese shredded
- 1/2 onion minced
- 2 cloves garlic minced
- dash salt
- dash pepper
- 1/2 tsp. nutmeg
- 14 oz. fire roasted diced tomatoes
- 28 oz. crushed tomatoes
- 2 tsp. basil
- 1 8x8 foil tray or freezer safe dish
- aluminum foil

Assembly instructions:
- Cook the lasagna noodles two minutes less than the package directions. Drain and rinse with cold water.
- In a bowl, mix together the drained chopped spinach, ricotta cheese, 1/3 cup of the mozzarella cheese, minced onion, minced garlic, salt, pepper, nutmeg, and Parmesan cheese.
- In another bowl, mix together the crushed tomatoes, fire roasted tomatoes, and basil.
- Place 1/2 cup of the sauce at the bottom of your tray.
- Spread a thin layer of the spinach ricotta filling mixture down the centre of each lasagna noodle and roll up, placing the completed roll down in the tray.
- Once all the lasagna rolls are in the tray, cover them with the remaining red sauce and sprinkle with the remaining 2/3 cup mozzarella cheese.
- Add aluminum foil. Freeze.
Cooking instructions:
- Thaw. Bake covered in a 350° oven for 40 minutes. Uncover and bake for an additional 10 minutes.
