Cheesy Baked Tortellini Casserole With Meat Sauce

- 1 (20oz) container of refrigerated or frozen cheese tortellini
- 1 lb ground beef
- 1 (24oz) jar of pasta sauce
- 8 (ounces) cream cheese (cubed)
- 1-2 cups shredded mozzarella cheese
- 1/2 cup grated or shredded parmesan
- seasoning to taste
Cook the pasta a la dente according to the package directions; drain and set aside.
Preheat oven to 350° F and grease a 9x13 baking dish.
In a large skillet, brown the ground beef with the seasoning of your choice. I use salt, garlic powder, black pepper & Italian seasoning.
Remove the excess grease from the browned beef and then stir in your tomato sauce and cream cheese. Simmer for a few minutes until the sauce is well incorporated.
Gently toss your cooked tortellini in with the sauce mixture and then pour it into your prepared casserole dish. Evenly sprinkle the top with shredded mozzarella and parmesan.
Bake uncovered in the center rack of your oven for about 20 minutes. Switch the oven to broil and continue baking for an additional 2-3 minutes or until the cheese starts to brown.

Preheat oven to 350 degrees. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
In a large bowl, mix together chicken, sour cream, soup, Ranch mix, bacon and cheese. Fold in frozen tater tots. Spoon mixture into prepared pan.
Bake uncovered for 40-45 minutes, until bubbly.
- Can use turkey bacon.
- Can use low-fat sour cream.
- You do not need to thaw the tater tots before adding them to the casserole. You can, but it isn’t necessary.
- I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.

- Can make casserole ahead of time and refrigerate or freeze for later.
- If baking immediately after removing from the refrigerator, you may need to add a few minutes to the cooking time.
- To bake after freezing, thaw completely and bake as directed above.
- To reheat after freezing, thaw completely. Cover with aluminum foil and bake at 350ºF for 30 to 40 minutes, until heated through.

INGREDIENTS
- 1 pound Round steak ; cut into thin strips
- 1/2 cup Onion ; chopped
- 2 tablespoon Butter or margarine
- 1 can Condensed cream of mushroom soup
- 1/4 cup Water
- 1/2 cup Sour cream
- 1/2 teaspoon Paprika
- 1/3 cup Sherry
INSTRUCTIONS
Brown steak and onion in butter. Stir in soup, water, sour cream and paprika. Cover; cook over low heat until meat is tender. Stir often. Just before serving, add sherry and simmer for one minute. Serve over noodles.

- 1 pound lean ground beef
- 1 onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning mix low sodium
- 1 cup enchilada sauce divided
- 1 ½ cups frozen corn
- 1 ½ cups bell pepper red, yellow or green, diced
- 12 ounces black beans drained and rinsed
- 3 cups shredded cheddar cheese divided
- 16 ounces frozen tater tots
- ⅓ cup salsa
OPTIONAL TOPPINGS
- Diced tomatoes
- Shredded lettuce
- Sour Cream
- Avocado Slices
Preheat oven to 400°F.
Brown ground beef, onion and garlic over medium high until no pink remains. Drain any fat.
Stir in taco seasoning, ½ cup water, ⅔ cup enchilada sauce, corn, bell pepper & beans. Cook until thickened (about 5 minutes).
Pour beef mixture into a 9×13 pan. Sprinkle with 1 ½ cups cheese and arrange tater tots on top.
Bake 30 minutes. Combine salsa and remaining ⅓ cup enchilada sauce. Spread over tater tots and top with remaining cheese.
Bake an additional 10 minutes or until cheese is melted & bubbly.
Serve with desired toppings
