Using It Up : Breakfast Edition
Sheet Pan Eggs

Sheet pan eggs are the perfect recipe when cooking for a morning crowd!
Ingredients
- 4 slices cooked bacon roughly chopped
- 18 large eggs
- ¼ cup whole milk
- ½ teaspoon salt more to taste
- ½ teaspoon black pepper
- 2 cups thinly sliced vegetables see notes
- 1 cup shredded cheddar cheese
- 1 green onion thinly sliced, optional
Instructions
- Preheat the oven to 350°F and line a 13"x18" rimmed baking sheet with parchment paper.
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper.
- Pour the whisked egg mixture onto the prepared baking sheet. Sprinkle with 2 cups of add-ins, bacon, and cheese.
- Bake for 20 to 25 minutes, until the eggs are set.
- Allow the eggs to cool in the pan for 5 minutes. Run a butter knife along the edges of the pan and cut the eggs into squares or rectangles.
- Garnish with sliced green onions and serve on toast or English muffins if desired.
Cream Cheese Stuffed French Toast
Thick slices of sweet, egg-soaked bread cooked until golden and stuffed with a sweet cream cheese filling. Perfect for a sweet breakfast or brunch treat.
Servings: 12 people
Ingredients
Filling
- 16 ounces cream cheese 1 package, softened
- 2 - 3 TBS Nutella OR 1/2 C ChocZero Hazelnut Cacao spread
- 0.67 cup powdered sugar or more to taste (use 1 - 2 tspn if using ChocZero or Nutella spread)
- 2 tablespoon vanilla extract
French Toast
- 24 slices Texas toast (one loaf)
- 4 eggs
- 1.5 cup milk
- 2 teaspoon ground cinnamon *OMITTED*
- 2 teaspoon granulated sugar *OMITTED*
- Optional toppings: strawberries, maple syrup, whipped cream
Instructions
- Beat together cream cheese, powdered sugar, and vanilla until you have a spreadable consistency.
- Spread a thick layer of cream cheese filling on one side of half of the Texas Toast. Top with a second piece of Texas toast, forming a sandwich with cream cheese filling in the middle.
- In a small bowl whisk eggs, milk, granulated sugar and cinnamon together. Dip the sandwiches in the egg mixture to coat completely
- Melt butter on a griddle or skillet over medium heat. Cook sandwiches until golden brown on both sides.
- Top with strawberries, syrup, and whipped cream (OPTIONAL - Mine with the choczero hazelnut cacao needed no topping at all.)

Chia Seed Pudding
Ingredients
- 5 cups unsweetened almond milk or whole milk, oat, soy, or other milk substitute
- 2.25 cup yogurt plain or flavored
- 1.5 cup chia seeds
- 6 tablespoons honey or other sweetener
- 6 cups fresh fruit
Instructions
- Pour the milk into a medium bowl. While whisking, add the chia seeds. Let rest for 5 minutes.
- Whisk yogurt and honey into the chia seed mixture until well combined.
- Pour into 4 small jars or containers and cover. Refrigerate for at least 8 hours and up to 4 days.
- Top each jar with fresh fruit for serving.
Notes
- Flavorings such as 1 teaspoon of vanilla extract, or ¼ teaspoon of cinnamon or other spices can be added.
- When using sweetened yogurt or almond milk, consider reducing or eliminating the honey or other sweetener.
- Yogurt is an optional ingredient in chia pudding.
