Sweet and Sour Meatballs // Freezer Meals 101

 Ingredients:

  • 1/2 pounds ground beef, raw
  • 1/4 cup graham cracker crumbs
  • 2 tablespoons onion, minced
  • 3 tablespoons MSG-free onion soup mix
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1/4 cup evaporated milk
  • 1 can pineapple chunks
  • 1 green bell pepper, sliced
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/3 cup vinegar
  • 1 tablespoon soy sauce

Assembly Instructions:

  1. Preheat the oven to 350 degrees.
  2. Add the ground beef, graham cracker crumbs, onion, onion soup mix, pepper, egg, and evaporated milk to a large bowl. Work the ingredients together until well combined, then form the mixture into balls.
  3. Place the meatballs on a baking sheet and bake for 25 minutes, until the meatballs are cooked through.
  4. While the meatballs are cooking, combine the pineapple chunks, green pepper, brown sugar, cornstarch, vinegar, and soy sauce to a large resealable freezer bag.
  5. When the meatballs are finished baking, allow them to cool completely then transfer them to the bag with the sauce ingredients. Mix the sauce around the meatballs until they’re evenly coated.
  6. Remove excess air from the bag and seal it closed.
  7. Place the meatballs in the freezer until you’re ready to start cooking.

Cooking Instructions:

  1. Transfer the meatballs to the refrigerator to thaw overnight.
  2. To prepare the meatballs in the oven, preheat the oven to 350 degrees. Pour the contents of the bag into a baking dish and cover the pan. Bake for one hour.
  3. To make the meatballs in the slow cooker, pour the contents of the bag into the bowl of the crockpot. Set the pot to cook on low for 4 to 5 hours or high for 2 to 3 hours.
