Here are the recipes / inspirations for our New Year's Day Feast

1.) Mississippi Pork Roast

I already had this pot roast made so I merely chopped (or you can shred) already made pot roast and saute in skillet with any seasonings, veggies and sauce desired until crispy and heated through.

2.) Seasoned Green Beans with Bacon

I am out of black - eyed peas and because I am the only person who eats them, I opened up 2 cans of Italian-style flat beans and added a little salt, pepper and Lawry's to kick it up. I then "hard-cooked" them in a pan until the flavors were all married together because this is how my family enjoys them.

3.) Mashed Potatoes 

My girls cannot stomach cabbage and due to health issues, I am not supposed to eat it, so we did NOT have any cabbage. I substituted mashed potatoes which everyone in my house LOVES. Again, thank you to Momma Mel.

4.) Simple Chocolate Cherry Crunch

I made a very simple chocolate cherry crisp that my dad would make for us when we wanted a special treat.

1.) Grease a 8x8 or 9x9 microwave safe casserole dish

2.) Dump in a can of cherry pie filling

3.) In a separate mixing bowl , add 1/3 C brown sugar and a 3.15 - 3.5 oz chocolate cake mix and blend well until brown sugar is well blended with cake mix (THIS gives it the "crunch"). Evenly spread this all over the cherry pie filling layer.

4.) Melt 1 stick (8 oz) of sweet cream butter and drizzle all over the top of the cake mix layer DO NOT stir the butter in -v just let it sit there on top and allow to set for 5-6 minutes to soak in to the cake mix layer.

5.) Microwave on high for 8 -15 minutes until cherry pie filling has bubbled up slightly . Remove from microwave and allow to sit for 5-6 minutes to allow pie filling to cool off and top to get slightly crunchy.

6.) Cut and serve with vanilla ice cream or all by itself. Either way is delicious!

5.) Greens - I had no fresh greens so I popped open a can and hard-cooked them with minced garlic and pieces of bacon for added flavor.

6.) Corn muffins

I had a box of cornbread mix that needed to be used so I followed the directions on the box, added a tablespoon of honey and made corn muffins.
