Crockpot Salisbury Steak

Ingredients
- 18 ounces sliced mushrooms
- 1.5 onion , sliced
- 4.5 cups beef broth (low sodium)
- 3 ounce package brown gravy mix (dry)
- 6 tablespoons ketchup
- 3 teaspoon dijon
- 6 tablespoons fresh parsley
- 6 tablespoons corn starch
- 12 tablespoons water
Beef Patties
- 4.5 pounds lean ground beef
- 3 egg yolk
- 0.75 cup minced onion
- 1 cup Panko bread crumbs
- 9 tablespoons milk
- 3 clove garlic
- salt & pepper to taste
Instructions
- Place mushrooms & onions in the bottom of your slow cooker.
- Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side).
- Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook on low 5 hours.
- Once cooked, remove patties and set aside.
- Turn slow cooker onto high. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
- Serve over mashed potatoes or rice.
TACO HASH BROWN CASSEROLE

Ingredients:
- 1½ lb ground beef
- 1 (1-oz) package taco seasoning
- ⅔ cup water
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- 1 (30 to 32-oz) bag of frozen diced hash browns
- 1 (10.5-oz) can cheese soup
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- 1 (8-oz) container sour cream
- 2 cups shredded cheddar cheese
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can corn, drained
Instructions:
- Brown ground beef in a large skillet over medium-high heat. Drain excess grease. Add taco seasoning and water to the pan and simmer for 5 to 10 minutes.
- In a large bowl, stir together hash browns, cheese soup, cream of chicken soup, sour cream, shredded cheddar cheese, taco meat, Rotel diced tomatoes and green chiles, black beans, and corn.
- Spray a 6-qt slow cooker with nonstick cooking spray. Pour potato mixture into the crockpot.
- Cover and cook on LOW for 8 hours.
Notes:
- I use frozen diced hashbrown potatoes. Can substitute shredded hash browns.
- Can substitute ground turkey for hamburger.
- I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
