Freezer Meals // Abbey Verigin

 Breakfast Sausage Recipe:

1 lb ground pork 1 tbsp red wine vinegar 1 tsp dried parsley 1 tsp garlic powder 1 tsp onion powder 1 tsp dried basil 1 tsp salt 1 tsp black pepper 1/2 tsp paprika 3/4 tsp chili flakes 1/2 tsp crushed fennel seed 1 tsp brown sugar or maple syrup

Pesto Meatball Recipe: 2 lbs ground beef 1/2 c oat flour 2/3 c pesto 2 eggs Chili flakes

Mix ingredients together and scoop onto a baking sheet using a 2 tbsp cookie scoop, or form into 1 1/2 inch balls. Bake at 400 for 15-20 minutes.

The BEST Oatmeal Cookie Recipe: 1/2 c softened butter 2/3 c cane sugar 1/4 c brown sugar 1 egg 1 egg yolk Splash of vanilla 1/4 tsp salt 1/2 tsp baking soda 1 1/4 c oat flour 1 1/4 c rolled oats Optional add ins: 1/2 c raisins + 1/2 tsp cinnamon, 1/2 c chocolate chips, 1/2 c chopped nuts or 1/4 tsp freshly grated nutmeg Cream together butter and sugar. Add egg, egg yolk and vanilla and mix well. Add salt, baking soda, oat flour, and cinnamon if using and mix well. Add oats and add ins if using. Scoop onto baking sheet using a 2 tbsp cookie scoop or form into 1 1/2 inch balls. Bake at 350 for 10-12 minutes until light golden. Remove pan from oven and tap gently against counter to help flatten cookies. Allow to cool on pan for at least 5 minutes before removing.

From Frozen: Bake at 350 for 13-15 minutes until light golden. Remove pan from oven and tap gently against counter to help flatten cookies. Allow to cool on pan for at least 5 minutes before removing.
