Cranberry Ambrosia Salad
Ingredients
- 1 pound fresh or frozen cranberries
- 1 can (20 ounces) crushed pineapple, drained
- 1 cup sugar
- 2 cups miniature marshmallows
- 1 cup heavy whipping cream, whipped
- 1/2 cup chopped pecans
Directions
- 1. In a food processor, cover and process cranberries until coarsely chopped. Transfer to a large bowl; stir in pineapple and sugar. Cover and refrigerate overnight.
- 2. Just before serving, fold in marshmallows, whipped cream and pecans. If desired, top with additional chopped pecans.
Ambrosia Salad
Ingredients
- 1 can (15 ounces) mandarin oranges, drained
- 1 can (8 ounces) pineapple tidbits, drained
- 1 cup miniature marshmallows
- 1 cup sweetened shredded coconut
- 1 cup sour cream
Directions
- In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.
- 2 cans (17 ounces each) fruit cocktail
- 2 cans (20 ounces each) pineapple chunks
- 2 cans (11 ounces each) mandarin oranges
- 4 packages (3.4 ounces each) instant pistachio pudding mix
- 2 cups sour cream
- 1 carton (12 ounces) frozen whipped topping, thawed
- Chopped pecans, optional
- 1. Drain fruit cocktail, pineapple and oranges, reserving 3 cups juice. Set fruit aside; pour juice into a 4-qt. bowl. Add pudding mix and mix until smooth. Stir in sour cream. Add whipped topping and mix until smooth. Fold in fruit; chill for several hours. Top with pecans just before serving if desired.
