Recipe: Freedom Redbird
3-4 #pork chops or more but double recipe
1 can of Cream of Chicken soup.
1 pkg or 3 Tablespoons Ranch Dressing mix
Put meat in crockpot, pour soup over top, shake on top the dressing
Let cook till meat is tender, about 4hrs or so.
You can use this recipe on chicken too!

2 pounds chicken thighs
Sauce
1/3 c soy sauce
1/3 c honey
1/3 c ketchup
6 cloves garlic
1/2 tsp apple cider vinegar
1 tsp fresh ginger ,,, 1/4 if using powder
Pinch red pepper flakes
Low 5 to 6 hrs
High 3 to 4
Thicken with cornstarch

2 tsp Chicken bouillon powder
1 cup water
1/2 tsp Poultry seasoning
1/4 tsp Sage
1/3 tsp Thyme
1/2 tsp pepper
1 tsp onion powder

1-2 tbsp corn starch for thickening Au Jus
2-3 large onions
2-3 bell peppers any colour

Crockpot Pepper Steak //The Bealles
1 lb steak strips
1 large onion, chopped
1 large pepper, chopped
3 cloves garlic, minced
3/4 cup water
2 tsp beef better than bouillon (or 2 beef bouillon cubes crushed)
1/4 cup soy sauce
2 tsp Worcestershire sauce
2 tbsp honey
1 tsp ground ginger
1/2 tsp pepper
1/2 tsp salt
2 tbsp cornstarch
Place beef, chopped onion, and chopped pepper in crockpot. Combine all other ingredients in a bowl to make the sauce. Pour sauce in crockpot. Cook on high for three hours. Serve over steamed jasmine rice.
Rotisserie Chicken / Mimi's Dishes

2Tbs brown sugar
1 1/2 tsp Chili powder
1tsp Smoked Paprika
1/2tsp Garlic powder
1/2tsp Onion powder

1 whole Chicken (remember to remove the neck,giblets,liver)
In a large crockpot, spray inside with cooking spray.Then place ball of Aluminum foil..
In a small bowl combine, brown sugar and spices. set it aside..
Rinse and pat dryer chicken inside and out.Generously salt and pepper the whole bird,then rub spice blend..
Place the bird inside the crock pot breast side up.
Cook on high 2 and 1/2 to 3 and 1/2 hours until the juices run clear (I always check between the legs and the thighs) or reach 165°.
carefully remove chicken slowly from Crock pot. placed on an oven sheet and broil until golden brown, about 4 to 6 minutes.

2 cups chicken broth
4 bone in pork chops
14 oz can of cream of mushroom soup

This is a wonderful take on Carrabba's Italian Sausage and Lentil Soup!
Not For Nothing Homestead
1 lb Italian Sausage
1 large onion, chopped
2 stalks celery, chopped
2 large carrots, chopped
1 small zucchini, chopped
6 cups chicken broth
2 14.5 cans diced tomatoes
2 cups lentils, rinsed and drained
2-3 garlic cloves
1 tsp salt
1/2 tsp pepper
1/2 tsp crushed red pepper
1 tsp basil
1 tsp oregano
1 tsp parsley
1 tsp thyme
Dump all ingredients, except lentils and zucchini, in crock pot. Set on high for 2 hours.
After 2 hours add lentils and zucchini and resume for another hour.
Servce with parmesan cheese!
** THE RECIPE ** 📝
Beef (Flank or similar) - 700g (1.5lb) cut across the grain.
Cornflour (Corn starch) - 2 tsp (in marinade).
Baking Soda - 1.5 tsp (in marinade).
Garlic - 2 tsp (in marinade).
Ginger - 1 tsp (in marinade).
Light Soy Sauce - 1 cup (in marinade).
Chinese Cooking Wine (Shao Shing) - 1/3 cup (in marinade).
Brown Sugar - 1/2 cup (in Marinade). You can halve this if you wish.
Carrots sliced - 2 medium (see video on shape).
Brown Onion - 1 large. Thin slices.
White pepper - 1/8 tspn.
Water - 1 Cup.
Cornflour (Cornstarch) - 2 tsp in a little water to thicken the sauce.
Spring Onion (Green Onion) - 1. Slice diagonally.
For the Chili / Hardnack Farms
Discretional amount Chili beans
I chopped red onion
Several sweet peppers chopped
Approximately a fourth cup of quinoa
Approximately one cup of red lentils
I chopped sweet potato I would add more
I box of Pomi tomato sauace
Spices used
Cumin
Fresh cracked black pepper
Turmeric
Paprika
Garlic powder
Chili powder
Cook chili beans a head of time
Then add all the ingredients into the slow cooker and cook for about 3 hours I would go to 4 hours and thirty minutes
Enjoy it’s a very healthy option if you want protein and you can’t or don’t want meat!
A wonderful meatless Monday recipe
Pumpkin Porridge / Hardnack Farms
Pumpkin porridge
I changed the recipe from food babe’s pumpkin porridge to suit what I like
I used GF oats from Trader Joe’s. I don’t measure so add as much as you would like
I used one entire can of pumpkin purée
Coconut milk or oat milk
Spices
Cinnamon
Ginger
Cloves
I had this for breakfast the next day I added a little more coconut milk and a pinch of coconut sugar
The recipe called for maple syrup and some chopped walnuts. I am going to try that the next day!
Maple Cinnamon Glazed Walnuts / My Table of Three
Recipe:
4 cups of nuts
1 large egg white, beat until foamy
1/2 cup white sugar
1 cup brown sugar
2 teaspoons of cinnamon
1/2 cup maple syrup mixed with 1 tablespoon of water
Spray the crockpot with cooking spray and add your nuts. Next add the foamy egg white and stir to coat all the nuts.
Then add in the sugar, brown sugar, and cinnamon. Stir to coat all the nuts.
Crockpot on high for 1.5 hours stirring every 15 to 20 minutes to keep them from burning.
At the 1.5 hour mark turn the crockpot to low and pour in the syrup and water mixture. Stir well. Cook 30 more minutes.
Pour the nuts out onto parchment paper and let air dry for one hour or until no longer sticky.
Witchy Brew Stew
Bloo's Self Reliance
INGREDIENTS
500g Beef Mince
8 Chipolata Sausages
4 Large Carrots (3 Diced and the other 1 cut into mini pumpkins see the video for instructions this of course is optional but it does make for some fun)
4 Medium Onions (Diced)
1/2 Bunch Celery (Diced)
500g Button Mushrooms (halved with eyes cut into them … see the video for instructions)
1/2 Cup Dried Black Eyed Beans
500ml Passata
2 Litres Water
2 Tablespoons of Vegetable Bouillion Powder
2 Beef Stock Cubes or 1 Tablespoon Powdered Beef Stock
2 Tablespoons of Mixed Herbs of your choice
METHOD
- Prep your veg.
- Cut your sausages in half
- Cut your carrots as per the video instructions or if you are feeling not as confident cut the carrots into thick slices first and cut out the little triangles to make your carrot pumpkins individually. This method will take more time but is better for beginners.
- Prep your mushrooms. I just used a small knife to cut 2 small eyes out of the cap.
- Saute your onion, celery and diced carrot until softened.
- Add your sausage “fingers”.
- Then your mince.
- Saute all until the mince is cooked.
- Add your beans and then the water.
- Add in your seasonings.
- Add in your carrot “pumpkins” and Mushroom “people” and stir well.
- Cook in a slow cooker for around 3 hours or in the oven on 150C/ 300F / Gas Mark 2 for 2-3 hours.
- Don’t forget to cover the pot even if it’s in the oven.
- Add the Passata after the stew is well cooked and the beans are ready and cook for a further 30-45 minutes.
- When serving make sure everyone gets a mushroom, carrot pumpkin and sausage finger on top.
QUICK NOTE :- If you cut the carrot pumpkins too thin the stalks will dissolve off in cooking. I would cut mine around 3/4 cm or 1/3 Inch thick next time.
