Cheesy Beef & Shells Recipe
Ingredients: 2 tablespoons butter 1 bell pepper, diced 1 yellow onion, diced 1-2 pounds ground beef 2 boxes shells & cheese, (cooked according to package directions and cheese added) salt & pepper to taste Cheese for topping, optional Directions: Melt butter in a saucepan over medium heat. Add the peppers and onions and cook for 3-4 minutes. Add the ground beef and cook until done, drain. Turn heat to medium low. Add the cooked shells and cheese. Top with cheese of your choice and place a lid on the skillet just long enough to melt the cheese.Pimento Cheese Recipe
INGREDIENTS:
1 (8-ounce) package cream cheese, room temperature
1 (4-ounce) package diced pimentos (or diced roasted red peppers), drained
1 cups shredded extra-sharp cheddar cheese
1 cup shredded Gouda cheese
1/2 cup thinly-sliced green onions
1 or 2 chopped jalapeno peppers
1/3 cup mayo
1/4 teaspoon garlic powder
1/4 teaspoon paprika
fine sea salt and black pepper
pickled jalapeno peppers for serving
INSTRUCTIONS
Stir together. Combine cream cheese, pimentos, cheddar cheese, Gouda cheese, green onions, peppers, mayo, garlic powder, paprika, and a pinch of salt and black pepper in a mixing bowl and stir until evenly combined.
Season. Taste and season with additional salt and pepper if needed.
Serve. Serve immediately, or transfer to a sealed jar or food storage container and refrigerate for up to 4 days.
Mexican Lasagna
Ingredients:
2 pounds ground beef
1 can Rotel
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 tsp salt
1 teaspoon red pepper flakes
1/2 teaspoon garlic powder
24 oz sour cream
6 medium flour tortillas
2 cans corn, drained
2 cups shredded cheddar cheese
Directions:
Preheat oven to 350 degrees.
Spray a 9X13 casserole dish with cooking spray.
Brown beef in skillet until cooked through, drain.
In a bowl combine the Rotel, chili powder, cumin, salt, red pepper flakes, garlic powder, and sour cream.
Layer the lasagna starting with just a small amount of the sour cream mixture.
Next add two of the tortillas, sour cream mixture, beef, corn, cheese.
Repeat layers two times, ending with the cheese.
Bake for 35 minutes.
Serve with optional toppings:
