Italian Meatballs (MINE)
Ingredients:
1 lb ground beef
1 lb ground sausage
1 lb ground turkey
1 room temperature egg beaten slightly
2 Tbsp each: garlic powder, smoked paprika, onion powder, dried parsley, Italian seasoning, kosher salt
1 1/2 C crushed crackers OR Italian bread crumbs
1/2 C grated Parmesan cheese
Directions:
1.) Mix egg into all seasonings, Parmesan cheese and 1 c Italian bread crumbs or crushed crackers.
2.) Mix all meats until all the egg mix is well incorporated with meats and all meats are blended.
Do NOT overwork meat!
3.) Roll meat mixture into 1-2 inch balls then roll in the left over breadcrumbs until all meatballs are lightly and completely covered with breadcrumbs (This is optional but is AWESOME!)
4.) Place in a preheated large frying pan or pot on medium low heat.
5.) Allow to brown lightly on one side then gently roll balls until all sides are browned. IF baking or cooking later, you can stop here and remove the balls from the heated pan to an area where it can drain and cool to just above room temperature. IF not cooking or baking more at time of eating, cook all the way through on low-medium heat until middle is 160 degrees (F) then remove from heat and drain. Allow to cool to just above room temperature then gently place in a freezer zipper style bag and remove all air from bag.
6.) Label bag with name of dish ( Italian Meatballs ) and Thaw in fridge over night as well as baking instructions (Bake at 375 degrees for 15 - 25 minutes or until internal temp is 160 degrees F )
7.) Lay bag flat to freeze so all meatballs are in single layer.
