Bread Crust Egg, Cheese and Ham Casserole // Q Kitchen

 Preheat Oven to 375 degrees (F)

Ingredients for Egg Mix:

12 scrambled raw eggs (room temperature)

1 1/2 C shredded cheese of your choice

1 1/2 - 2 C diced cooked ham chunks

salt, pepper, garlic powder and other desired seasonings you would usually add to your eggs or omelets

1 1/2 C milk or light cream

Mix the cheese, ham and seasonings together until well blended then slowly mix in the milk

Cut stale or stout bread (French, Italian,Texas Toast or Potato bread) OR use an entire bag of crusts.

GENEROUSLY butter or grease bottoms and sides of casserole dish(es)

Arrange bread cubes or crusts loosely on bottom 1/2 of casserole dish

Wisk all ingredients in egg mixture together and ladel over bread layer evenly until all cubes or crusts are covered at least a 1/2 inch over top of the bread layer. Place in 375 degree preheated oven.

Bake for 30 minutes then check to see if middle of egg mix is set and no longer "jiggly". If no longer jiggly in the middle, stick a knife in the middle and to the bottom of the casserole. If knife comes out clean-it is done. Deeper casserole dishes can be covered around the edges and baked for 45-55 minutes before needing to be checked. 

Use a knife while still hot to separate the dish from the side of the egg bake then allow to cool an additional 10 minutes before cutting into serving size pieces and removing to a cooler rack to completely cool down. This can be eaten right away OR allowed to cool and placed in serving sized pieces in a ziplock FREEZER bag in a single layer with all air removed before completely closed and laid flat in your freezer.

Be sure to label your bag:

 " Egg, Cheese and Ham Casserole - Allow to thaw over night in fridge then reheat in microwave for 45 seconds - 1 minute wrapped in a paper towel before using. Can also be reheated over low heat in a frying pan on stove"
