Bacon Cheddar Stuffed Meatloaf (MINE!)
Recipe:
Preheat oven to 375 degrees Ingredients: 2 lbs ground meat 1 cup +1/2-2 cups shredded chedder cheese 1/2 - 1 POUND crispy baked bacon, cut into bite-sized pieces 1 c crushed goldfish snacks, Doritos or other cheese-flavored crackers * forgot to mention in the video 1 room temp egg (raw and beaten) 2 Tbs each: onion powder, garlic powder, paprika and kosher salt, pepper Directions: Preheat oven to 375 degrees (F) Mix all together (EXCEPT 1/2 C shredded cheese and 1/2 C chopped cooked bacon) just until seasonings and egg are blended with meat. Do not overwork the meat. Press 1/2 of the meat mix into deep casserole dish (I used 8 x 8) Layer 1/2 c of shredded cheese on top of the layer of meat in dish then layer 1/2 c of the crispy bacon on top of layer of shredded cheese. Press the remainder of the ground beef on top of the bacon. Add remainder of cheese (Reserve 1/2 c for top) then the remainder (Reserve 1/2c for top) of the bacon. Place in oven for 30 minutes then remove the aluminum foil for last 15 minutes. Make sure middle of meatloaf is 160 degrees (F) and the cheese is melted and slightly browned before removing from oven. Allow to set for 10 minutes before slicing and serving * Putting a small glass jar into the middle of your meat loaf will suck the grease out of the meatloaf after you remove it from the stove.* ** Covering your meatloaf is optional but very helpful with not burning the cheese **
