Tater Tot Casserole with Beef and Veggies
Tater Tot Casserole Ingredients:
- 750 g bag frozen tater tots
- 1 lb. lean ground beef, browned
- 1 cup diced onion
- 2 cups of frozen mixed vegetables
- 10.5 oz. can cream of mushroom soup
- 1 cup evaporated milk
- 1 clove garlic, minced
- 1/4 tsp. dry mustard powder
- salt and pepper to taste
- 2 cups of cheddar cheese, shredded
Assembly instructions:
- Brown ground beef and cool slightly.
- Place beef in a large resealable freezer bag.
- Add the chopped onion and mixed vegetables.
- In a mixing bowl, stir together soup, evaporated milk, garlic, and seasonings. Pour into the bag over the other ingredients.
- Place the shredded cheese in a medium freezer bag.
- Remove the excess air from both bags, seal, and staple together above the fold.
- Freeze.
Crockpot cooking instructions:
- Thaw.
- Dump the contents of the large bag into the slow cooker.* Cook on high for 3-4 hours or 6 hours on low.
- Top with cheese near the end of cooking.
- Serve.
*This casserole tends to stick to the sides of the slow cooker making it hard to clean afterwards, so I suggest using Crock-Pot liners. They are food safe and can be thrown out after use making clean-up a breeze!
Oven cooking instructions:
- Thaw.
- Place contents of the large bag in a 9×13 casserole dish. Top with cheese. Bake at 400° for 30 minutes.
Beefy Rice Slow Cooker Casserole
Beefy Rice Crock Pot Recipe:
Ingredients:
- 1 1/2 lbs. ground beef, browned
- 28 oz. can diced tomatoes, undrained
- 1 onion, chopped
- 1/4 cup green pepper, chopped
- 1 tsp. salt
- 1 tsp. chili powder
- 1 cup uncooked long grain converted rice
Assembly instructions:
- Place the uncooked rice in a medium sized resealable freezer bag. Seal.
- Brown the beef.
- Chop the onion and green pepper.
- Add the cooled ground beef, tomatoes, onion, green pepper, and seasonings to a large resealable freezer bag.
- Squish to combine.
- Remove the excess air and seal.
- Staple the bag containing the rice to the larger bag above the seal.
- Freeze.
Cooking instructions:
- Thaw.
- Remove the staples (carefully).
- Dump the contents of both bags to the slow cooker.
- Add one cup of water and stir.
- Cook on low for 4-5 hours or on high for 2-3 hours.
Spanish Rice Casserole
Spanish Rice Recipe:
- 1 lb. ground beef, cooked
- 2 cloves garlic, minced
- 4 cups pasta sauce
- 2 cups white or brown rice, cooked and cooled
- 1/2 cup onion, diced
- 1/2 green pepper, diced
- 2 1/4 oz. can sliced black olives (or half the can)
- 2 cups cheddar cheese, shredded
Assembly instructions:
- Brown the beef.
- Cook and cool the rice.
- Chop the vegetables.
- Place the grated cheddar cheese in a medium resealable bag.
- Put all the other ingredients in a large resealable bag and squish to mix together. Remove excess air and seal. Staple the bags together above the seal.
- Freeze.
Cooking instructions:
- Thaw.
- Put the contents of the large bag in a large casserole dish and top with cheese.
- Bake for 30-40 minutes at 350°.
Variations of the Spanish Rice Casserole:
- Use veggie ground round in place of the ground beef to make this meal vegetarian.
- Omit the olives if you’re not a fan of black olives or add the full can if you can’t get enough.
- Use red or orange peppers in place of the green peppers if you want a milder flavour.
- Serve with hot sauce if you like things spicy.
- You can change up the flavours a bit by trying this recipe with different pasta sauces. Use whichever your favourites are.
- 1 lb. lean ground beef browned*
- 3 tsp. cumin
- 1 tsp. oregano
- 3 tsp. paprika
- 3 tsp. chili powder
- 2 cloves garlic minced
- 1 red pepper diced
- 1 yellow pepper diced
- 1 onion diced
- 14 oz. can tomatoes
- 1 tsp. lime juice
- 2 cups cooked rice
- 2 cups shredded cheddar or Tex Mex cheese
Cook the rice. Brown the beef. Chop the peppers and onion.
Place all the ingredients except for the cheese in a large resealable freezer bag.
Remove the excess air from the bag, seal.
Place the shredded cheese in a medium freezer bag. Seal and staple it to the other bag above the seal. Freeze.
- Thaw.
Place the large bag ingredients in a skillet. Cook over medium heat until cooked through, stirring occasionally.
Top with the cheese the last few minutes of cooking.
*If you want to make this meal vegetarian, you can substitute the ground beef for veggie ground round. It's especially good with the Mexican flavored one.
