Pimiento Cheese Spread
Pimento Cheese
Ingredients
- 1 cup mayonnaise (I use 3/4 C and 1/4 C sour cream blended well)
- 1 (4-ounce) jar diced pimentos, DO NOT DRAIN - PULSE in a food processor WITH the juices THIS makes for smooth and creamy texture
- pour this into the mayo blend just until incorporated.
- In a small bowl, add the following and mix well before using blender to add the spices into the mayo mix and pimientos.
- 1/2 teaspoon each: celery seeds, Worcestershire sauce
- pinch of cayenne pepper (I like 1/8 tspn or more)
- 1 tspn each: granulated garlic, smoked paprika, minced onion OR onion powder
- ** IMPORTANT ** MIX WELL with mayo and sour cream blend
- NEXT, freshly shred and mix the following
- 1 (8-ounce) block extra-sharp cheddar cheese, finely shredded
- 1 (8-ounce) block sharp cheddar cheese, finely shredded
- 1 (8-ounce) block mild sharp cheddar, medium shredded
- After you have hand mixed together the cheeses, add and mix into sauce/spice mix just until cheese is all covered and moist. Do NOT over blend or mix
Notes
If you want it to be a little less thick, add more mayonnaise.
