Pimiento Cheese Spread

 

Pimento Cheese

Ingredients

  • 1 cup mayonnaise (I use 3/4 C and 1/4 C sour cream blended well)
  • 1 (4-ounce) jar diced pimentos, DO NOT DRAIN - PULSE in a food processor WITH the juices THIS makes for  smooth and creamy texture
  •      pour this into the mayo blend just until incorporated.
  • In a small bowl, add the following and mix well before using blender to add the spices into the mayo mix and pimientos. 
  • 1/2 teaspoon each: celery seeds, Worcestershire sauce
  • pinch of cayenne pepper (I like 1/8 tspn or more)
  • 1 tspn each: granulated garlic, smoked paprika, minced onion OR onion powder
  • ** IMPORTANT ** MIX WELL with mayo and sour cream blend

  • NEXT, freshly shred and mix the following
  • 1 (8-ounce) block extra-sharp cheddar cheese, finely shredded
  • 1 (8-ounce) block sharp cheddar cheese, finely shredded
  • 1 (8-ounce) block mild sharp cheddar, medium shredded
  •  
  • After you have hand mixed together the cheeses, add and mix into sauce/spice mix just until cheese is all covered and moist. Do NOT over blend or mix
  • Combine all ingredients in a large bowl. Stir together with a wooden spoon until evenly mixed. (Mix with mixer if you want it creamy like mine is)
  • Cover well with plastic wrap and refrigerate until ready to serve.

Notes

If you want it to be a little less thick, add more mayonnaise.
