French Toast Casserole Ingredients

  •  8 eggs
  •  1/2 cup unsalted butter, softened
  •  8 oz cream cheese, softened
  •  1/3 cup golden monkfruit or golden sweetener
  •  1/4 cup coconut flour
  •  1/2 teaspoon cinnamon
  •  1/2 teaspoon baking powder
  •  1/4 teaspoon salt

Keto French Toast Casserole Directions

  • Blend ingredients

    Add the eggs, butter, cream cheese, coconut flour, brown sugar like sweetener, cinnamon, baking powder and salt to a blender and blend until smooth. You can use an electric mixer too - it will just take longer to combine.

  • Pour and bake

    Pour the egg mixture into a the baking dish and bake at 350 degrees for 40 minutes or until golden brown and set on top. Remove and let cool. Serve with berries, sugar-free syrup or whipped cream.

    •  ½ cup mozzarella cheese
    •  2 tablespoons almond flour
    •  ½ teaspoon baking powder

    • Whisk it

      Whisk together egg, mozzarella cheese, almond flour, and baking powder

      Ingredients

      Pour mixture

      Pour chaffle mixture into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set.

    • Remove & enjoy

      Remove chaffle from the waffle maker and serve.

      Instructions

      1. Drain the canned salmon of all liquid and place into a large bowl. Remove any large or visible bones and then mash it with a fork.

      2. Mix the beaten egg, salmon, mustard powder, lemon zest, lemon juice, fresh parsley, chopped chives, seasoning, and gently mix together well.

      3. Make four even sized salmon patties.

      How to Shallow Fry

      1. Heat the oil in a large non stick pan such as a cast iron skillet.

      2. Fry the salmon cakes over a medium-low heat for about 3-4 mins each side until deep golden and heated through.

      How to Oven Bake

      1. Preheat your oven to 375°F

      2. Place the salmon patties on a parchment lined sheet pan and bake for 10-15 minutes or until they are warmed in the middle, turning them over halfway through.

      Recipe Notes

      Salmon – I used canned salmon for convenience but you could use fresh salmon if you have it. I would steam or poach it first and then simply flake it up, remove any skin and bones, and then use it in place of the canned salmon.
