Crockpot Bacon Cheeseburger Soup // Tales From An Empty Nest

 CROCKPOT BACON CHEESEBURGER SOUP:

4 medium potatoes, peeled and diced 1 onion, diced 1 pound ground beef 8-10 slices of bacon 4 cups chicken broth 3 tbsp butter 3 tbsp flour 2 cups milk or heavy whipping cream 2 cups shredded cheese Season to taste Start by peeling and dicing your potatoes (make sure you wash them). Dice up your onion. Throw those in the crockpot and add the chicken broth. Add your seasonings. Cook on low for 6-8 hours or on high for 4-5 hours. About an hour before you are ready to eat, cook your bacon and set aside. Brown your ground beef and drain. Wipe out the pan you cooked the beef in and add the butter. Let it melt and then add in the flour. Stir for about 2-3 minutes. Add in the milk (or cream) slowly, whisking constantly. Once it's bubbly, take it off the stove. Add the ground beef, bacon and cream sauce to the crockpot. Add the cheese. Stir well and then put the lid back on and let it cook on LOW for another 30-45 minutes. Top with a little more cheese/bacon/green onions/whatever you want!
