Hot Fruit Jelly // Our Georgia Suburban Homestead

  4 cups of fruit 1/4 cup hot pepper 1 packet of pectin 5 cups of sugar 1 tbsp lemon juice or 1/4 tsp citric acid Pulse peppers and fruit in a food processor until you have the correct measurement. Combine that with the pectin in a non-reactive kettle over a medium-high heat and stir until combined and slightly bubbling. Add the sugar and bring to a rolling boil. Set your timer to 2 minutes, stirring occasionally to keep from burning. Skim foam into a bowl (this is yummy on toast) Once timer goes off, turn heat off and skim all the foam you can. Ladle into sterilized jars, loosely attach lids and give it a boiling water bath for 15 minutes. Remove jars from the water and allow to cool on a towel on the counter. Sealed jars will keep for at least 2 years.

  Ingredients 3   cups   all-purpose flour   2   teaspoons   baking powder 2   teaspoons   baking soda 2   tablespoons   pumpkin pie spice 1   teaspoon   salt   2   cups   pumpkin puree 4   eggs 6   tablespoons   butter ,  melted 1 ⁄ 4   cup   brown sugar ,  melted 2   cups   whole milk Directions In a mixing bowl, mix together flour, baking powder, baking soda, pumpkin spice, and salt and set aside. In another bowl mix together pumpkin, eggs, butter, brown sugar, and milk until well combined. Make a well in the middle of the dry ingredients and pour in the wet mixture. Mix until just combined. Pour the waffle batter into the waffle iron and cook according to the iron’s directions.

Cream of Soup

  Make your own cream of soup so you know what’s in it. Melt 2 tbs butter, add 2 tbs flour. Blend well into a paste. Add two cups of vegetable, beef, chicken broth or milk. Add your choice minced celery, mushrooms, broccoli. or 2 cups shredded cheese for Mac and cheese. Blend and melt. Add garlic, onion, salt, pepper, your spices. Pour over elbow macaroni for Mac and cheese.

  Crockpot Swiss Steak  Ingredients 1 ½ pounds cube steaks 2 carrots, sliced into 1 inch pieces 1 stalk celery, sliced into 1 inch pieces ½ onion, sliced 2 cloves garlic, sliced ¼ cup flour 1 Tbsp olive oil 1.5 cups beef broth 1 10oz can condensed tomato soup 2 Tbsp tomato paste 1 Tbsp Worcestershire sauce ½ tsp dried thyme leaves salt and pepper to taste corn starch for thickening optional Instructions  Add sliced carrots, celery, onion, & garlic to the bottom of a slow cooker. Pound steaks with a meat tenderizer to ¼ inch thickness and season with salt and pepper (cube steaks do not need to be pounded). Put flour in a shallow dish or plate and dredge each steak in the flour mixture. Heat oil in a skillet over medium-high heat and brown steaks on both sides, about 2 minutes per side adding more oil if needed. In the same pan, add wine and scrape up any brown bits.
